SOUTHWESTERN FLANK STEAK

This flank steak is butterflied, and then rolled into a pinwheel shape, filled with spinach and roasted red peppers. If you ask your butcher to butterfly the flank steak, it will save you time and effort....most grocery stores offer this service at no charge. If you have to do it yourself, use a sharp knife to cut the steak in half, cutting almost to, but not completely through the opposite side to form a butterfly shape. Prep and cook time does not include the 8 hour marinating time.

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 15

3/4 cup lemon juice
3/4 cup vegetable oil
1/4 cup Worcestershire sauce
1 garlic clove, minced
1 teaspoon liquid smoke
1/4 teaspoon pepper
1 1/2 lbs flank steaks, butterflied
1 (8 ounce) package frozen chopped spinach, thawed and well drained
1 (12 ounce) jar roasted red peppers packed in oil, drained and cut into very thin strips
1 cup onion, finely chopped
2 (4 ounce) cans chopped green chilies, drained
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 cup monterey jack cheese, shredded

Steps:

  • Combine the first 6 ingredients in a bowl; stir well. Place the steak in a large heavy-duty, zip-top plastic bag. Pour the marinade mixture over the steak. Seal the bag securely, and place it in a large bowl. Marinate in the refrigerator for 8 hours, turning occasionally.
  • Remove the steak from the marinade, discarding the marinade. Spread the spinach over the steak to within 1/2 inch of edges. Top with the red peppers and onions.
  • Combine the chiles, garlic, cumin and chili powder. Spread the chile mixture over the pepper and onion layer. Sprinkle with cheese. Roll the steak, starting at the short side. Secure with a heavy string at 2 inch intervals. Place in a shallow roasting pan. Bake at 350 degrees for 45 minutes. Let stand 5 minutes before serving.

Tips:

  • Choose the right cut of steak: Flank steak is a lean cut of meat that is best marinated before cooking. It is important to use a flank steak that is at least 1 inch thick, as this will help it to cook evenly.
  • Use a flavorful marinade: The marinade for this recipe is packed with flavor, thanks to the combination of chili powder, cumin, garlic, and lime juice. Be sure to let the steak marinate for at least 30 minutes, or up to overnight, to allow the flavors to penetrate the meat.
  • Cook the steak over high heat: Flank steak should be cooked over high heat to quickly sear the outside and keep the inside juicy. Be sure to preheat your grill or skillet before adding the steak, and cook it for no more than 5-7 minutes per side, or until it reaches your desired level of doneness.
  • Let the steak rest before slicing: Once the steak is cooked, let it rest for 5-10 minutes before slicing. This will allow the juices to redistribute throughout the steak, resulting in a more tender and flavorful piece of meat.

Conclusion:

This Southwestern flank steak marinade is a delicious and easy way to add flavor to your next grilled or pan-seared steak. The combination of chili powder, cumin, garlic, and lime juice creates a marinade that is both flavorful and versatile. Whether you are serving the steak with rice, beans, or vegetables, this marinade is sure to be a hit. So next time you are looking for a quick and easy weeknight meal, give this Southwestern flank steak marinade a try. You won't be disappointed!
