Use for flank or skirt steak (or meat of choice). Make sure that all surfaces of the meat have contact with the marinade. Allow to marinate up to 2 hours; cook as desired. I generally grill a flank steak for sandwiches or tacos when I'm feeling the need for something fun. It's got a Southwestern flair to it, but is still agreeable enough for my 4-year-old's palate. This flank steak is butterflied, and then rolled into a pinwheel shape, filled with spinach and roasted red peppers. If you ask your butcher to butterfly the flank steak, it will save you time and effort....most grocery stores offer this service at no charge. If you have to do it yourself, use a sharp knife to cut the steak in half, cutting almost to, but not completely through the opposite side to form a butterfly shape. Prep and cook time does not include the 8 hour marinating time.

3/4 cup lemon juice
3/4 cup vegetable oil
1/4 cup Worcestershire sauce
1 garlic clove, minced
1 teaspoon liquid smoke
1/4 teaspoon pepper
1 1/2 lbs flank steaks, butterflied
1 (8 ounce) package frozen chopped spinach, thawed and well drained
1 (12 ounce) jar roasted red peppers packed in oil, drained and cut into very thin strips
1 cup onion, finely chopped
2 (4 ounce) cans chopped green chilies, drained
1 garlic clove, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 cup monterey jack cheese, shredded

  • Combine the first 6 ingredients in a bowl; stir well. Place the steak in a large heavy-duty, zip-top plastic bag. Pour the marinade mixture over the steak. Seal the bag securely, and place it in a large bowl. Marinate in the refrigerator for 8 hours, turning occasionally.
