Yield 2 people

Number Of Ingredients 6

Large head of romaine
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn (I used frozen, thawed)
5 green onions

Steps:

  • Finely chop romaine, bell pepper, tomatoes, and green onions. Place all ingredients in a large bowl and stir to combine. Toss with desired dressing.

Tips:

  • Prep Ahead: Chop the salad ingredients and store them separately in airtight containers in the refrigerator up to 3 days in advance. When ready to serve, toss everything together and enjoy!
  • Choose Fresh Ingredients: The fresher the ingredients, the tastier the salad will be. Look for crisp veggies, ripe avocado, and flavorful herbs.
  • Don't Overdress: A little dressing goes a long way in this salad. Start with a small amount and add more to taste.
  • Serve Immediately: The salad is best when served immediately after it's made. The dressing will wilt the lettuce if it sits for too long.

Conclusion:

This Southwestern Chopped Salad is a flavorful and refreshing side dish or light meal. It's packed with fresh veggies, avocado, black beans, and corn, and tossed in a tangy cilantro-lime dressing. The salad is easy to make and can be tailored to your liking. For a spicier salad, add some chopped jalapeƱo or chili powder. For a heartier salad, add some grilled chicken or shrimp. No matter how you serve it, this salad is sure to be a hit!
