This turned out very yummy! I used Mission brand Spinach and Jalapeno Cheese flavored wraps. This recipe is perfect for a pot luck, a picnic, or game day.

8 oz pkg cream cheese, room temperature
3 Tbsp light sour cream
10 oz can(s) rotel tomatoes*, drained
1/2 tsp minced garlic
1 tsp seasoning salt
1 tsp ground black pepper
2 c shredded cheddar cheese (i used tillamook triple cheddar blend)
5 green onions, thinly sliced
4.25 oz can(s) chopped olives
1 jalapeno, seeded and diced
2 c cooked, shredded chicken
4-5 burrito size flour tortillas or wraps in assorted flavors

Steps:

  • 1. Using a mixer, combine cream cheese, sour cream, diced tomatoes, garlic, and seasonings.
  • 2. Using a spoon, stir in cheese, green onion, olives, jalapeno, and shredded chicken.
  • 3. Divide the mixture between the tortillas (I got four), spreading out evenly leaving about 1/2 inch border at the edge. Roll up tightly, and wrap in plastic wrap. Refrigerate for at least one hour or until ready to serve.
  • 4. Remove from refrigerator and use a sharp knife to slice into 1-1/2" to 2" pieces.

I wanted to make pinwheels for our annual Halloween party, but was in a "southwestern" mood, so I came up with this recipe. Everyone at the party enjoyed it - hope you do too!

8 large sun-dried tomato tortillas
16 ounces cream cheese, softened
1 (1 1/4 ounce) packet taco seasoning
2 cooked boneless skinless chicken breasts, chopped fine
15 ounces black beans, drained and rinsed
2 -3 green onions, chopped
1 large tomatoes, seeded and chopped
1 cup tex-mex cheese

Steps:

  • In a medium bowl, mix together the cream cheese and taco seasoning until well blended.
  • Spread evenly onto the tortillas.
  • Next add the black beans, chicken, onions tomatoes and cheese in a thin layer over each tortilla - don't add too much of the toppings or else they will be hard to roll up.
  • Roll tightly in cling wrap and refrigerate for 8 hrs or overnight.
  • Slice into 1 inch slices and serve.
  • Note - it is easier to slice if you place them in the freezer for 1/2 hr or so first.
  • ** I only use about 1/2 - 3/4 of the can of beans, it all depends on how much you like them **.
  • ** I only use about 1/2 the package of taco seasoning as well as I find a full packet to be a little too salty **.

1 can (4 ounces) chopped green chiles
1 cup finely shredded cheddar cheese
1/2 cup thinly sliced green onions
8 flour tortillas (10 inches)
Salsa

Steps:

  • In a small bowl, beat cream cheese, sour cream, picante sauce, taco seasoning and garlic powder until smooth. Stir in olives, chiles, cheese and onions. Spread about 1/2 cup on each tortilla. , Roll up jelly-roll style; wrap. Refrigerate for 2 hours or overnight. Slice into 1-in. pieces. Serve with salsa.

2 unbaked pie crusts
¼ (8 ounce) package shredded Cheddar cheese
½ pound cubed cooked chicken breast meat
½ cup uncooked instant rice
1 (15 ounce) can black beans, drained
1 cup cooked corn
1 (2.25 ounce) can sliced black olives, drained
1 cup sour cream
¾ cup prepared salsa
¾ (8 ounce) package shredded Cheddar cheese
1 teaspoon garlic powder
1 teaspoon ground cumin
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place a pie crust into a pie dish, and bake in the preheated oven for 5 minutes. Sprinkle 1/4 of an 8-ounce package of Cheddar cheese onto the crust, and set aside.
  • In a bowl, combine the chicken, instant rice, black beans, corn, black olives, sour cream, salsa, 3/4 of 8-ounce package of Cheddar cheese, garlic powder, and cumin. Season to taste with salt and pepper, and pour the mixture into the partially-baked crust. Top the pie with the remaining crust, seal the edges of the pie, and cut slits into the top crust.
  • Bake for 25 minutes, and check to see if the crust is becoming too brown. If it is, wrap a strip of aluminum foil around the edge of the crust. Bake until the pie is golden brown and bubbling, 15 to 20 more minutes.
  • Allow the pie to sit for 10 minutes before serving.

4 ounces light cream cheese, softened
1/4 cup finely shredded sharp cheddar cheese (or Mexican blend)
2 tablespoons finely sliced scallions
2 tablespoons chunky salsa (home made or your favorite in a jar)
2 tablespoons chopped fresh cilantro
1/2 teaspoon cumin
2 flavored 10-inch flour tortillas (tomato/basil, jalapeno/cilantro, or spinach are some kinds I can find in stores here)
lavash bread, works well also
1 (10 ounce) package baby spinach leaves

Steps:

  • In a bowl, combine cream cheese, shredded cheese, scallion, salsa, cilantro and cumin and mix well.
  • Spread mixture evenly over the two flour tortillas- be sure to reach to the ends.
  • Place a single layer of the baby spinach leaves evenly over the crem cheese mixture.
  • Roll the tortillas tightly.
  • This step is important and will give the"pinwheel" look to your appetizers.
  • Wrap each roll in plastic wrap, and chill for at least an hour, or up to 8 hours.
  • After rolls are chilled, unwrap and cut each one in half.
  • Begin from the smooth half, and cut roll into 1 inch circles.
  • You should get 4 to 5 circles from each tortilla half depending on how well you tortilla"ends" hold together.
  • Arrange your pinwheels cut side up on your serving platter.
  • Cover and chill for up to one hour before serving.
