SOUTHWESTERN CHICKEN AND RICE BAKE
This is from southernfood.about.com. It's a great dish for using leftover chicken and rice, and it is VERY easy. Don't let the number of ingredients fool you - as a lot of them are spices. I used almond milk and whole wheat flour, but regular milk and all purpose flour can be used (respectively). You can also use less ground red pepper if you don't want it quite so hot.

Tips:
- Opt for skinless and boneless chicken breasts to reduce fat and make slicing easier.
- Use a sharp knife to get even-sized chicken strips for uniform cooking.
- Don't overcrowd the pan when searing the chicken. This will prevent steaming and ensure a nice sear.
- Use a large skillet or Dutch oven to accommodate the chicken and rice without overcrowding.
- Add the liquid (broth or water) gradually, allowing the rice to absorb it before adding more.
- Use a timer to ensure the rice is cooked properly. Different types of rice have different cooking times, so check the package instructions.
- Fluff the rice with a fork before serving to separate the grains and make it light and fluffy.
Conclusion:
This Southwestern chicken and rice dish is a flavorful, easy-to-make meal that's perfect for busy weeknights. It's also a great way to use up leftover chicken. With its combination of tender chicken, fluffy rice, and a zesty Southwestern sauce, this dish is sure to be a hit with the whole family.
