Time 1h

Number Of Ingredients 13

1 lb pork sausage
1 onion (, finely chopped)
1 red bell pepper (large, chopped)
15 oz black beans (from the can, drained)
4 oz green chili peppers (, diced, from the can)
1 1/2 cups cheddar cheese (, shredded)
1/2 cup Mozzarella cheese (, shredded)
3 cups hash browns (, frozen, raw, uncooked, completely defrosted)
6 eggs
1/2 cup heavy cream
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon butter (melted)

Steps:

  • Preheat oven to 375 F.
  • In a large skillet, cook pork sausage together with finely chopped onions on medium heat until the sausage is cooked through and is no longer pink. Add chopped red bell pepper, black beans, and diced green chili peppers. Add half the spices (1/2 teaspoon of chili powder and 1/2 teaspoon of cumin) and mix everything up.
  • Add shredded cheddar cheese, shredded mozzarella cheese, and hash browns to the sausage mixture and mix them in.
  • In a small bowl, whisk eggs, heavy cream, and the remaining half of spices (1/2 teaspoon of chili powder and 1/2 teaspoon of cumin).
  • Use 2.8 L (3 quarts) rectangular baking dish - 11 inches long x 8.5 inches wide x 3 inches deep. Brush the bottom and the sides of the baking pan with 1 tablespoon of melted butter.
  • Add half the sausage mixture to the baking pan, and pour half of the egg mixture over the sausage mixture, carefully and evenly. Add the remaining half of the sausage mixture on top, and pour the remaining half of the egg mixture evenly over the sausage mixture.
  • Bake, uncovered for about 40-50 minutes. The casserole is ready when the eggs are set and no longer liquid in the center. Let the dish cool for about 30 minutes before slicing it.

SOUTHWESTERN HASH WITH EGGS

Southwestern Hash with Eggs image

Before I retired, this all-in-one skillet dish was constantly requested at office brunches. I'd leave out the eggs, double or triple the recipe and wrap servings of the zippy pork mixture in warm corn tortillas. -Barbara Beasley, Beaumont, Texas

Time 15m

Yield 4 serving(s)

Number Of Ingredients 10

1 tablespoon butter
1 cup chopped country ham
1 small red bell pepper, chopped
6 eggs
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
4 ounces shredded cheddar cheese

Steps:

  • Heat butter in a large skillet over medium-high heat.
  • Add ham and red pepper.
  • Saute until ham is browned and pepper is slightly soft.
  • Meanwhile, mix eggs, cream, salt, pepper, chili powder, and garlic in a medium bowl.
  • Whisk vigorously until the eggs are a uniform color with no streaks.
  • Spread ham mixture evenly in the pan.
  • Pour egg mixture over it without stirring.
  • As mixture begins to set, lift edges gently and allow uncooked eggs to run to the bottom.
  • Continue in this manner until eggs are almost dry.
  • Stir egg mixture completely ("scramble") and add the shredded cheese.
  • Stir until cheese is melted.

Tips:

  • When preparing the roasted vegetables, aim for a tender-crisp texture. Overcooking them will result in mushy vegetables, while undercooking them will leave them crunchy and unappetizing.
  • For a flavorful and zesty salsa, choose ripe, juicy tomatoes and fresh cilantro. You can also add a touch of heat with diced jalapeños or chili peppers.
  • To ensure evenly cooked eggs, use a well-seasoned cast iron skillet or a non-stick pan. This will prevent the eggs from sticking and ensure a golden-brown, crispy exterior.
  • When serving the eggs, sprinkle them with your favorite toppings such as crumbled queso fresco, chopped avocado, or a dollop of sour cream. These toppings will add extra flavor and texture to the dish.
  • For a complete and satisfying brunch, accompany the southwestern brunch eggs with fresh fruit, crispy hash browns, or a side salad.

Conclusion:

The southwestern brunch eggs are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner.
