1 teaspoon canola oil
2 cans (15 ounces each) black beans, rinsed and drained

1 can (16 ounces) kidney beans, rinsed and drained

1 (15 1/2 ounce) can red kidney beans, rinsed and drained
1 (15 1/2 ounce) can pinto beans or 1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 cooked chicken breast, shredded
3 cups water
1 (14 1/2 ounce) can Mexican-style stewed tomatoes
1 (10 ounce) package frozen whole kernel corn, thawed
1 cup sliced carrot
1 cup chopped onion
1 (4 ounce) can chopped green chilies
2 tablespoons chicken bouillon granules or 2 tablespoons vegetable bouillon granules
1 -2 teaspoon chili powder
2 garlic cloves, minced
1/3 cup flour
1/4 cup yellow cornmeal
1 teaspoon baking powder
1 dash salt
1 dash pepper
1 egg white, beaten
2 tablespoons milk
1 tablespoon oil

Steps:

  • Combine 11 soup ingredients in slow cooker.
  • Cover and cook on low 10 - 12 hours or high 4 - 5 hours.
  • Make cumplings by mixing together flour, cornmeal, baking powder, salt and pepper.
  • Combine egg white, milk and oil. Add to flour mixture. Stir with fork until just combined.
  • At the end of the soup's cooking time, turn slow cooker to high. Drop dumplings by rounded teaspoonfuls to make 8 mounsd atop the soup.
  • Cover and cook for 30 minutes (do not lift cover).
  • Serve topped with your choice(s) of sour cream, shredded cheddar cheese and crushed tortilla chips.

This soup has a good chili flavor and is simple to pull together even when the refrigerator is looking pretty bare. I do substitute fresh ingredients when I have them and the time to prepare them, but I list canned ones here for convenience (and they do taste pretty good anyhow!). I leave the seeds in my chili pepper, but take them out if you want a milder taste, and adjust the seasonings accordingly as well. This soup is very flexible - it's a good way to use up leftover chicken, beans and corn, and I believe you could use ground beef or turkey or TVP in this just as easily as chicken breast. I found a 6 can soup recipe on the web, but I altered it so much that it became something new, and this is the result.

1 teaspoon chili powder
1 1/2 tablespoons dried parsley
2 tablespoons fresh lime juice

Steps:

  • Drain and rinse the beans and place in a 6 quart crock pot.
  • Add the chicken, corn, and tomatoes with their juices to the beans.
  • Add the remainder of the ingredients and stir.
  • Cover and cook on low for 6 hours or more.
  • We like this better the second day, and really don't think it can be overcooked!
  • Serve the soup in large bowls and top with cheese, sour cream, and/or chips, if desired.

1 can (16 ounces) refried beans
1/4 cup picante sauce or salsa
1 can (14-1/2 ounces) chicken broth

Hot pepper sauce, optional
Shredded cheddar cheese
Tortilla chips

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving drippings. Crumble bacon and set aside. In the drippings, saute the onion, celery and garlic powder until vegetables are tender., Add the beans, picante sauce, broth, parsley and bacon; bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until flavors are blended. Season to taste with pepper sauce if desired. Ladle into bowls and top with cheese. Serve with tortilla chips.

1 cup vegetable broth (good when made with broth from potato peels, onion skins and garlic!)
2 tablespoons minced garlic
2 large onions, chopped
1 large red bell pepper, seeded and diced
1 1/2 cups dried pinto beans, rinsed, sorted, and soaked overnight
2 teaspoons oregano (mexican oregano, if you can find it)
2 teaspoons cumin
2 chipotle chiles (if dried, stem and mince. If canned, smash and add a bit of the adobo sauce)
4 cups water
2 cups corn kernels
3 ounces tomato paste
1 lime, juice of
salt and pepper
diced tomato
diced avocado
minced cilantro
chopped green onion

Steps:

  • Place 1 cup of vegetable broth in 4 quart (or larger pressure cooker). Bring to a full simmer.
  • Add garlic to broth, simmer 1 minute.
  • Add chopped onions and diced red bell pepper to garlic broth mix. Simmer 2 minutes.
  • Drain and rinse pinto beans from overnight soak. Add to the mixture in the pressure cooker.
  • Add oregano, cumin, chipotle peppers, corn and water to the pressure cooker.
  • Bring to a full boil. Seal cooker with lid and bring to high pressure.
  • Cook beans at high pressure for 10 minutes. Allow pressure to come down naturally (or you may use speed release if your pressure cooker supports this).
  • Put tomato paste in blender. Add 1 cup of the bean mixture to the blender and puree.
  • Return the pureed mixture to the cooker and season with salt and pepper to taste.
  • Garnish with diced tomatoes, cilantro and avocado and green onions.

1/3 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon baking powder
1 dash pepper
1 beaten egg white
2 tablespoons milk
1 tablespoon cooking oil

Steps:

  • Combine broth, beans, undrained tomatoes, corn, carrot, onion, chili peppers, chili powder, and garlic in a crock pot (3 1/2 to 4 qt size is best).
  • Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours.
  • Dumplings:.
  • Stir together flour, cornmeal, baking powder, and pepper in a medium sized bowl.
  • Mix together egg white, milk, and oil in a small bowl.
  • Add to flour mixture and stir with a fork just until combined.
  • Divide dumpling mixture into 6 mounds and drop on top of the bubbling soup.
  • Cover and cook on low-heat setting for 30 minutes more or on high-heat setting for 20 minutes more (don''t give in to temptation to lift lid) or until a wooden toothpick inserted in center comes out clean.
  • Serve in bowls with 1 dumpling for each serving.

1 stalk celery, diced

1/2 cup chopped onion
3 cloves garlic, smashed and minced
1 teaspoon cumin

salt and pepper

Steps:

  • Spray large sauce pan with cooking spray.
