Our whole family loves foods spiced with picante sauce, so I developed this recipe! This dish is very quick and easy to make, and it also reheats well. Sometimes I add cooked, sliced potatoes to the stew for a little variety, too.

Romping in the national forest amid tall ponderosa pines around our home gives my husband and our two little boys big appetites. They like this savory stew. Because I'm a busy firefighter, I often make it ahead and serve it when I need a meal in a hurry. -Linda Russell, Forest Lakes, Arizona

Tips:

  • Prep your vegetables in advance: Cut and chop your vegetables before you start cooking to save time and ensure even cooking.
  • Use a variety of vegetables: The more colorful your vegetables, the more nutritious and flavorful your stew will be. Try to include a mix of root vegetables, leafy greens, and beans or lentils.
  • Don't overcrowd the pot: If you add too many vegetables at once, they will not cook evenly and the stew will become watery. Cook the vegetables in batches if necessary.
  • Season well: Southwest vegetable stew is a flavorful dish, so don't be afraid to use plenty of spices. Chili powder, cumin, and paprika are all good choices.
  • Simmer until the vegetables are tender: The stew should simmer for at least 30 minutes, or until the vegetables are tender. This will allow the flavors to meld and develop.

Conclusion:

Southwest vegetable stew is a healthy, flavorful, and easy-to-make dish that is perfect for a weeknight meal. It is packed with vegetables, beans, and spices, and can be tailored to your own taste preferences. Serve with a side of rice, quinoa, or bread for a complete meal.
