A simple recipe with a tasty crunch that is loaded with fun flavors and an amazing taste.

Number Of Ingredients 11

3 medium onions, peeled and diced ((about 1 lb.))
1 medium carrot, shredded
2 garlic cloves, minced
1 cup grated Parmesan
2 eggs
1/2 cup flour
1/3 cup chopped parsley
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup oil, for frying

Steps:

  • In a large bowl mix together all of the ingredients besides the oil.
  • Place a cast iron or non-stick pan over medium heat until hot. Add the oil and swirl to coat the pan (a non-stick pan needs less oil). Scoop out 2- to 3-tablespoon mounds of the onion mixture into the pan, flattening the mounds slightly with a spoon and spacing them about one inch apart.
  • Cook the fritters for 2 to 3 minutes, flip them once, and cook them for an additional 1 to 2 minutes until they're golden brown and cooked through. (*See recipe note below for baking instructions).

3/4 c flour
1 Tbsp sugar
1 Tbsp cornmeal
2 tsp baking powder
1-2 tsp salt-according to taste
3/4 c milk
2 1/2 c chopped onions
oil for frying

  • 1. Mix together dry ingredients.
  • 2. add milk and stir.
  • 3. batter will be thick.
  • 4. add onions and mix throughly.
  • 5. heat 1/2 inch oil in skillet over medium high heat.
  • 6. drop batter by tablespoons in hot oil, flatten slightly, brown on both sides until nice and crisp.
  • 7. drain on paper towels.

¼ cup all-purpose flour
¼ cup grated Parmesan cheese
1 large egg, beaten
2 cloves garlic, minced
kosher salt and ground black pepper to taste
2 tablespoons olive oil

Steps:

  • Toss zucchini and salt together in a large colander and place in sink to drain for 10 minutes.
  • Put zucchini in the middle of a piece of cheesecloth; wrap cheesecloth around zucchini and squeeze to drain as much moisture from zucchini as possible.
  • Mix flour, Parmesan cheese, egg, garlic, kosher salt, and pepper together in a large bowl. Stir in zucchini.

2 large sweet onions
2-1/2 cups buttermilk
2 eggs
3 tablespoons water
1-3/4 cups all-purpose flour
2 teaspoons salt
2 teaspoons chili powder
1 to 2 teaspoons cayenne pepper
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon ground cumin
Oil for deep-fat frying

Steps:

  • Cut onions into 1/4-in. slices; separate into rings. Place in a large bowl; cover with buttermilk and soak for 30 minutes, stirring twice. , In a shallow dish, beat eggs and water.
