2 cups ricotta cheese
1/2 cup chopped fresh cilantro
2 cloves garlic, finely chopped
2 cans or jars (24 oz each) garlic-and-herb tomato pasta sauce
9 no-boil lasagna noodles
2 cups cooked crumbled Italian turkey sausage
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup frozen corn (from 12-oz bag), thawed
1 zucchini, thinly sliced
Salt and pepper to taste
2 cups shredded Mexican or Italian cheese blend (8 oz)
Fresh cilantro sprigs, if desired

Steps:

  • Heat oven to 350°F. In small bowl, mix ricotta cheese, chopped cilantro and garlic.
  • In 9-inch square pan, spread 1/4 cup of the pasta sauce. Top with 3 noodles; spread 1 cup of the ricotta mixture over noodles. Layer with 1 cup pasta sauce and half each of the sausage, beans, corn and zucchini. Sprinkle zucchini with salt and pepper. Top with 1 cup pasta sauce and 1/2 cup of the shredded cheese. Layer with 3 more noodles, remaining ricotta mixture, 1 cup pasta sauce and remaining sausage, beans, corn and zucchini. Sprinkle with 1/2 cup shredded cheese. Layer with remaining noodles, pasta sauce and shredded cheese.
  • Cover with foil; bake 15 minutes. Uncover; bake 15 to 25 minutes longer or until bubbly and cheese is golden brown. Let stand 10 minutes before cutting. Garnish with cilantro sprigs.

I cooked up this little recipe one night when I wanted to make lasagna but realized I had everything but the pasta sauce. In a moment of inspiration I grabbed the taco seasoning and went about making my southwest lasagna. It was a big hit with my family and it is staying on the menu! I hope you enjoy it as well

1 lb ground beef
1 can(s) campbell's cheddar cheese soup
1 pkg old el paso taco seasoning
1 small tomato dieced
6 medium sliced black olives
1/2 pkg lasagna noodles, cooked
3 c shredded cheese (taco)

Steps:

  • 1. Cooked Ground Beef until brown, add tomatoes and black olives.
  • 2. Add taco seasoning still until well blended,
  • 3. Pour Cheddar Cheese soup into medium mixing bowl and add one cup of milk stir (or whisk) until creamy. Then pour soup into beef and stir together
  • 4. Preheat oven to 325 degrees
  • 5. In Casserole dish place a layer of lasgana noodles, then add beef mixture to coat the noodles then Cheese alternate until desired thickness is reached.

1 1 deli roasted chicken, shredded (or any leftover chicken)
1 Tbsp lime juice
1 1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
1 small onion, chopped
2 garlic cloves, chopped fine
1 Tbsp vegetable oil
1 16 oz jar of salsa (use the one you love mild or hot)
1 16 oz can chili (i use leftover homemade but canned works well also)
1 4.5oz can chopped green chilies
cheddar cheese to taste, shredded
flour or corn tortillias

Steps:

  • 1. Combine first 5 ingredients, let stand 5 min. set aside
  • 2. Saute onion, garlic in hot oil until tender, add salsa, chili, green chilies. Reduce heat & simmer 15min
  • 3. Line bottom of lasagna pan with enough tortillas to cover, add 1/2 chili mixture, 1/2 chicken mixture, and cheese to taste. Repeat layers, top with tortillas, sprinkle w/cheese.
  • 4. Bake @ 350 for 25-30 min. Let stand 5-10 min before serving.
