SOUTHWEST CHICKEN SKILLET

Categories     Bean     Chicken     Sauté     Kid-Friendly     Quick & Easy     Dinner     Casserole/Gratin

Yield 4-6 servings

Number Of Ingredients 8

1 cup uncooked long grain white rice
1 cup salsa
1.5-2 cups precooked shredded chicken
1 (15 oz.) can black beans
1 Tbsp chili powder
1¾ cups chicken broth
1 cup shredded cheese
2-3 green onions, sliced

Steps:

  • In a large skillet, combine the rice, salsa, chicken, black beans (drained), chili powder, and chicken broth. Stir until everything is evenly combined. Place a tight fitting lid on the skillet, turn the heat on to high, and let the skillet come to a full boil. As soon as the skillet comes to a boil, turn the heat down to low and let it simmer for 30 minutes. Make sure it is simmering the entire time, turning the heat up slightly if needed (you should be able to hear it simmer quietly). After 30 minutes, turn off the heat, remove the lid, and fluff the mixture with a fork. All of the liquid should be absorbed and the rice should be tender. Sprinkle 1 cup of shredded cheese over top, replace the lid, and let it sit for a few minutes, or until the cheese is melted. Meanwhile, slice the green onions. Sprinkle the green onions over the melted cheese and serve hot.

Tips:

  • Prep Ingredients: Before starting, measure and prep all ingredients to ensure a smooth cooking process.
  • Use Fresh Spices: Use fresh ground cumin, chili powder, and paprika for the best flavor. Fresh spices yield more robust flavors compared to pre-ground ones.
  • Sear Chicken Properly: Sear the chicken pieces in a single layer to achieve a nice golden-brown crust. Avoid overcrowding the pan, as this will result in steamed rather than seared chicken.
  • Use Quality Salsa: Opt for a high-quality, flavorful salsa that complements the dish. A good salsa can greatly elevate the overall taste of the dish.
  • Adjust Seasonings: Taste the dish and adjust seasonings according to your preference. Add more chili powder or cumin for a spicier flavor, or salt and pepper to taste.
  • Serve with Desired Accompaniments: Serve the skillet with a variety of accompaniments such as rice, tortillas, avocado slices, sour cream, cilantro, and lime wedges to create a complete and satisfying meal.

Conclusion:

This versatile Southwest Chicken Skillet offers a delightful blend of flavors and textures, making it a perfect dish for busy weeknight dinners or casual gatherings. With tender chicken, a flavorful sauce, and a variety of customizable options, it's a recipe that can be tailored to suit your taste preferences. Whether served with rice, tortillas, or as a flavorful filling for tacos or burritos, this dish is sure to be a hit. So gather your ingredients, fire up the skillet, and enjoy the deliciousness of this Southwest-inspired creation!
