1 large onion (chopped)
1 large green pepper (chopped)
2 cloves garlic (chopped)
1 bottle (15oz) chunky salsa
1 tablespoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes
1 pound boneless, skinless chicken breast meat (chopped into bite size pieces)
2 cans black beans (drained and rinsed)
1 package 8-10 flour tortillas
4 cups shredded Mexican blend cheese
1 can 28 oz diced tomatoes

Steps:

  • Saute onion, green pepper and garlic in olive oil for about 5 minutes. Add cumin, salt, pepper, red pepper flakes, beans, salsa, tomatoes and chicken. Simmer on medium to low heat for 10 minutes.
  • Spoon some of this mixture into a 13 x 9 baking pan or two 8x8 pans.
  • Cut the tortillas in half.
  • Line the pan with the tortillas by placing the flat cut side against the sides allowing the center to overlap.
  • Sprinkle about 1/3 of the cheese on top of the tortilla layer.
  • Spoon half of the chicken and bean mixture on top.
  • Place another layer of tortillas on next followed by cheese and the remaining chicken & beans.
  • Finish with the remaining cheese
  • Cover with foil and cook for 35 minutes in a 350 degree oven.
  • Serve with chopped lettuce, tomatoes and sour cream.

Also easy to change to your liking by adding other veggies or peppers. Save time by cooking extra chicken ahead of time when making other chicken dishes. Serve with your choice of toppings, like sour cream, guacamole, sliced avocados, sliced black olives, or whatever else you like!

1 pound skinless, boneless chicken breast halves
½ cup water, or as needed
1 large onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can black beans, partially drained
1 (14 ounce) can whole kernel corn, drained
¾ cup picante sauce
1 (4 ounce) can chopped green chiles
2 tablespoons chili powder
1 tablespoon ground cumin
4 (8 inch) flour tortillas
1 (10.75 ounce) can condensed fiesta-style nacho cheese soup
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring chicken breasts and water to a boil in a large skillet; cook over medium heat until chicken juices run clear and meat is no longer pink inside, about 10 minutes. Transfer chicken breasts to a large plate, reserving pan juices in skillet, and shred chicken with 2 forks.
  • Cook onion and red bell pepper in reserved drippings over medium heat until onion is translucent, 5 to 8 minutes. Return shredded chicken to skillet. Stir black beans, corn, picante sauce, chopped green chiles, chili powder, and cumin into chicken mixture until thoroughly combined. Bring mixture to a simmer and cook until heated through, about 5 minutes. Pour chicken mixture into prepared baking dish.
  • Arrange flour tortillas in a single layer over chicken mixture. Stir fiesta soup with diced tomatoes and green chiles in a bowl until thoroughly combined; spread soup mixture over tortillas. Top casserole with Mexican cheese blend.

It is great for a family meal, as party fare, or to take to a pot luck. I also like it because you can feed a lot of people with a few inexpensive ingredients.

3 large boneless skinless chicken breasts
2 (26 ounce) jars of walmart corn and black bean salsa
1 (15 1/2 ounce) can black beans
1 (10 ounce) bag frozen sweet corn, thawed
24 small flour tortillas
2 cups shredded Mexican blend cheese
ground cumin
celery salt

Steps:

  • Preheat oven to 350 degrees.
  • Sprinkle chicken breast generously with cumin and celery salt on both sides.
  • Place chicken in microwave steam bag, and cook according to package directions, reserving any cooking liquid.
  • Shred cooked chicken with two forks.
  • Combine shredded chicken, black beans, corn, and 1/2 of one jar of salsa and reserved cooking liquid in a large bowl.
  • Spread 1/2 of one jar of salsa into the bottom of two 13x9 baking dishes.
  • Place aprox. 3-4 tablespoons of the chicken mixture in the center of each tortilla and roll up.
  • Put each roll, seam side down, close together into baking dish.
  • Top each dish with 1/2 of the remaining salsa.
  • Sprinkle with cheese.
  • Bake at 350 degrees for 15-20 minutes or until cheese is melted and dish is bubbly.

3 cups cooked rice
1 -2 tablespoon butter
1/2 teaspoon salt
14 1/2 ounces diced tomatoes with green pepper and onion, undrained
2 cups shredded cheddar cheese, DIVIDED
1 tablespoon oil
1 cup chopped sweet onion
5 cups diced cooked chicken
19 ounces enchilada sauce
29 ounces black beans, rinsed and drained
1/2 teaspoon pepper
1/4 teaspoon salt
1/2 teaspoon adobo seasoning
1/2 teaspoon ground cumin
1 tablespoon cilantro
2 3/4 ounces sliced black olives (optional)
2 teaspoons cilantro

Steps:

  • Preheat oven to 350. Lightly spray a 13" x 9" baking dish with nonstick cooking spray.
  • In a large skillet over medium heat, melt butter; add rice, salt and diced tomatoes w/ pepper/onion. Heat through and pour into bottom of prepared baking pan. Sprinkle 1 cup of the cheese over top.
  • In same skillet, over med-high heat, sautee onion in the oil until translucent. Add diced cooked chicken, enchilada sauce, black beans, pepper, salt, adobo, cumin and 1 tbsp cilantro. Stir and heat through. Pour over top of mixture already in the baking pan.
  • Sprinkle remaining 1 cup cheddar cheese over top. (then scatter optional sliced black olives over cheese, if using them). Sprinkle with 2 tsp cilantro.
  • Bake at 350 for 20-25 minutes.

⅔ cup brown rice
1 cup vegetable broth (Can also use chicken broth)
1 Tablespoon olive oil
⅓ diced onion
2 medium zucchini (thinly sliced)
2 boneless, skinless chicken breasts (diced)
½ cup sliced mushrooms
½ teaspoon cumin
salt (to taste)
ground cayenne pepper (to taste)
1 (15oz) can black beans (drained and rinsed)
1 (4oz) can green chilies (drained)
1-2 cups shredded cheddar cheese (Monterey Jack or Swiss would work too)

Steps:

  • Mix the rice and vegetable broth in a pot, and bring to a boil. Reduce heat to low, cover, and simmer 45 minutes, or until rice is tender.
  • Preheat oven to 350 degrees. Lightly grease a large 9×13? casserole dish.
  • Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Mix in the zucchini, chicken, and mushrooms. Season with cumin, salt, and ground cayenne pepper. Cook and stir until zucchini is lightly browned and chicken is heated through.
  • In large bowl, mix the cooked rice, onion, zucchini, chicken, mushrooms, beans, chiles, and 1/2 the cheese. Transfer to the prepared casserole dish, and sprinkle with remaining cheese.
  • Cover casserole loosely with foil, and bake 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, or until bubbly and lightly browned.
  • This would also make a great vegetarian dish- just omit the chicken!

1 tablespoon canola oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained

1 teaspoon ground cumin

1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cans (15 ounces each) black beans, rinsed and drained
3 cups cubed cooked chicken breast
8 corn tortillas (6 inches)
