1 pound of sausage, casing removed {you can use any sausage you like}
1 small sweet onion, chopped {about 1 cup}
1 large red bell pepper, seeds removed, diced
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
Dash of salt and pepper
12 eggs, cracked
1/2 cup milk {I used 1 % but use whatever you like}
1 cup Sargento® 4 State Cheddar Cheese, divided
1/4 cup salsa {you can use whatever salsa you like, I used a red salsa}
1 jalapeño, sliced {optional for spice}
Freshly chopped cilantro
Freshly chopped green onion
Salsa or sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large skillet heat 2 Tablespoons olive oil over medium heat. Add the sausage and cook for 2 minutes, stirring to break it up. Add the onion, bell pepper, cumin, chili powder, cayenne pepper, salt and pepper. Continue to cook until the sausage is browned, stirring throughout the process. Remove from the heat and set aside.
  • In a large mixing bowl whisk together the eggs and milk until combined. Add the 1/2 cup cheese and salsa and stir gently until mixed in.

1 lb pork sausage
1 onion (, finely chopped)
1 red bell pepper (large, chopped)
15 oz black beans (from the can, drained)
4 oz green chili peppers (, diced, from the can)
1 1/2 cups cheddar cheese (, shredded)
1/2 cup Mozzarella cheese (, shredded)
3 cups hash browns (, frozen, raw, uncooked, completely defrosted)
6 eggs
1/2 cup heavy cream
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon butter (melted)

Steps:

  • Preheat oven to 375 F.
  • In a large skillet, cook pork sausage together with finely chopped onions on medium heat until the sausage is cooked through and is no longer pink. Add chopped red bell pepper, black beans, and diced green chili peppers. Add half the spices (1/2 teaspoon of chili powder and 1/2 teaspoon of cumin) and mix everything up.

4 cups colby or 4 cups monterey jack cheese
6 eggs
2 (4 ounce) cans diced green chilies
1 teaspoon salt
1 teaspoon dry mustard
2 cups half-and-half
butter or margarine, softened

Steps:

  • Lightly butter both side of bread slices and place in 9x13-inch baking dish.
  • In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
