1 boneless pork shoulder butt roast (about 2 pounds)
1/2 cup lime juice
2 envelopes mesquite marinade mix
1/4 cup sugar
1/4 cup olive oil
SALSA:
1 cup frozen corn, thawed
1 cup canned black beans, rinsed and drained
1 small tomato, finely chopped
2 tablespoons finely chopped seeded jalapeno pepper
2 tablespoons lime juice
2 tablespoons olive oil
1-1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
SAUCE:
1 can (4 ounces) chopped green chiles
1/3 cup apricot preserves
1/8 teaspoon salt
CROSTINI:
32 slices French bread baguette (1/4 inch thick)
1/4 cup olive oil
2/3 cup crumbled queso fresco or feta cheese
Lime wedges, optional

Steps:

  • Place roast in a 3-qt. slow cooker. In a small bowl, whisk lime juice, marinade mix, sugar and oil until blended; pour over roast. Cook, covered, on low 6-8 hours or until meat is tender., For salsa, in a small bowl, combine corn, beans, tomato and jalapeno. Stir in lime juice, oil and seasonings. In a small saucepan, combine sauce ingredients; cook and stir over low heat until blended., For crostini, preheat broiler. Brush bread slices on both sides with oil; place on ungreased baking sheets. Broil 3-4 in. from heat 1-2 minutes on each side or until golden brown., Remove roast from slow cooker; cool slightly. Shred pork with 2 forks. To serve, layer toasts with salsa, pork and cheese. Top with sauce. If desired, serve with lime wedges.

1/4 cup finely shredded iceberg lettuce

1/2 of a baguette, Sliced
2 tablespoons olive oil
cumin, for sprinkling
chili powder, for sprinkling
4 slices bacon
1/3 cup mayonnaise
1/4 cup salsa
1 ancho chili pepper, Chopped
1/2 cup of shredded monterey jack pepper cheese
1/2 cup of arugula lettuce
1 tomatoes, Chopped
1 tablespoon cilantro, Chopped

Steps:

  • Start out by chopping up your baguette into 3/4" slices.
  • Brush the olive oil over the top of the pieces and sprinkle them with your cumin and chili powder.
  • Next up, you'll mix together the mayo. salsa, and the chili pepper.
  • Spread your mixture over the top of your baguette bites.

1 medium head escarole (about 12 ounces), rinsed and outer leaves removed
Kosher salt and freshly ground black pepper
8 slices bacon, preferably center cut
1/4 cup extra-virgin olive oil, plus more for grilling
4 thick slices sourdough bread
1 ripe medium tomato, halved
4 lemon wedges, for serving

Steps:

  • 1. Soak four 6-inch bamboo skewers in water for 30 minutes and preheat grill to medium.
  • 2. Cut escarole lengthwise, through core, into 4 wedges. Season with salt and pepper. Wrap each wedge tightly with 2 slices of bacon; secure with skewers and brush with 1/4 cup olive oil. Place bundles skewered side down and covered with a disposable aluminum pan on grill. Cook, turning occasionally until bacon is crisp, about 12 minutes.
  • 3. Lightly brush bread with additional olive oil, season with salt and black pepper to taste and char on grill, about 1 minute per side. Remove and rub bread with cut side of tomato halves until toasts are saturated with tomato's juices.

This is an easy-to-make main dish salad from bhg.com. For even quicker prep, sub heat-and-eat bacon for the turkey bacon. Don't cheat on the dressing, though. IMO, that makes the whole thing worth eating. Use neutral greens, like romaine or iceberg lettuces, so that the greens don't overpower the rest of the salad. I use the pre-chopped romaine hearts from the produce section so I can throw the whole thing together in 15 minutes. Also, the dressing is pretty thick. If you prefer a thinner dressing, add more milk, 1 tablespoon at a time, until it reaches the desired consistency.
