2lb sweet potatoes
3/4 cup dark brown sugar (or light brown sugar)
1 cup white sugar
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp ginger
1/4 tsp salt
2 tbsp vanilla extract
1 stick butter
4 tbsp frozen orange juice concentrate (thawed)

Steps:

  • Scrub, peel and slice your yams into 1/2 inch rounds. In a medium pot over medium high heat, combine the sweet potatoes and the rest of the ingredients. Stir the sweet potatoes until coated in the sugar and butter mixture.
  • Let it come to a boil. Cover then simmer for about 50 minutes or until the yams are nice and tender when slightly pierced with the tines of a fork or taste. If the yam is still a bit hard. Let it cook a bit longer.
  • Remove the top then set stove to medium. Let the cooking liquid come to a boil. Stirring occasionally until the cooking liquid reduces about 10 minute or until the syrup coats the yams. 4 teaspoons cornstarch
1/2 teaspoon salt

1 cup orange juice
1/4 cup honey
3 tablespoons butter
2 tablespoons water
2 tablespoons grated orange zest
1/2 cup chopped walnuts

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain. When potatoes are cool, peel and cut into 1/2-in. slices. Arrange in a greased shallow 3-qt. baking dish; set aside., In a large saucepan, combine the brown sugar, cornstarch, salt and cinnamon. 1 cup packed brown sugar
1/4 cup orange juice
1 tsp. ground cinnamon

Steps:

  • Heat oven to 350°F.
  • Spread yams onto bottom of 13x9-inch pan sprayed with cooking spray.
  • Melt butter in small saucepan on medium heat. Add sugar, orange juice and cinnamon; mix well. Cook 5 min. or until mixture comes to boil and sugar is completely dissolved, stirring constantly. Pour over yams; cover.
