Categories     Vegetables

Number Of Ingredients 7

2 (14 oz) can(s) turnip greens
1 (14 oz) can(s) vegetable broth
1 (14 oz) can(s) tomatoes w/ green chili
1 small yellow onion -- chopped
1 small red bell pepper -- chopped
1/2 clove garlic -- minced
1 lb country boy mild sausage

Steps:

  • 1. Add sausage, onion, bell pepper, and garlic to a deep skillet.
  • 2. Cook until the sausage is nice and brown.
  • 3. Then add turnip greens, broth, and tomatoes.
  • 4. Then let it all simmer for 30 minutes on low heat.

Tips:

  • For the best flavor, use fresh turnip greens. If you can't find them, you can substitute collard greens or mustard greens.
  • Be sure to wash the turnip greens thoroughly before cooking. This will remove any dirt or grit.
  • If you don't have a ham hock, you can use smoked sausage or bacon instead. Just be sure to add a little more salt to the pot.
  • Cook the turnip greens until they are tender, but still have a little bit of crunch. Overcooked turnip greens will be mushy.
  • Serve the turnip greens with cornbread, mashed potatoes, or rice.

Conclusion:

Southern turnip greens with sausage is a classic Southern dish that is easy to make and packed with flavor. This dish is a great way to use up leftover turnip greens, and it's also a healthy and affordable meal. So next time you're looking for a simple and delicious Southern dish, give this recipe a try.
