2 tablespoons olive oil
1 to 2-pound smoked salt pork (thickly sliced) or turkey wings
1 onion, halved
1 quart chicken broth
1 teaspoon red chili flakes
1 teaspoon salt
2 tablespoons white vinegar
1/2 teaspoon garlic powder
2 pounds fresh collard greens, washed, stems removed and roughly chopped
6 cloves garlic
Sweet Maple Cornbread, recipe follows
Cooking spray
1 cup cornmeal
1 cup all-purpose flour
4 teaspoons baking powder
4 tablespoons maple syrup
2 teaspoons salt
1/4 cup oil
2 eggs
1 cup milk
2 tablespoons butter, softened

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the pork pieces and brown on both sides, about 6 to 8 minutes. Add the onion, cut sides down, and brown, about 5 to 6 minutes. Stir in the chicken broth. Season with chili flakes, salt, vinegar and garlic powder. Bring to a boil, then turn down the heat to a simmer. Adjust seasoning, if desired. Add the collard greens and garlic cloves, stir to combine and cover. Cook until greens are tender, approximately 35 to 45 minutes.   • Heat the oven to 375 degrees F. Coat an 8 by 8-inch baking pan with cooking spray.
  • In a large bowl, whisk together all the ingredients except the butter and pour into the pan. Bake for 18 to 20 minutes, until the cornbread is lightly golden brown.

1 cup all-purpose flour
1/2 cup brown sugar, packed
4 teaspoons baking powder
1 egg, beaten
1/2 teaspoon vanilla
1 cup milk
1/4 cup canola oil

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix cornmeal, flour, sugar,and baking powder together. Add egg, vanilla, milk and oil.
  • Beat until just smooth, do not over beat!
  • Pour batter into a greased 8 inch square pan or a cast iron pan.

1/4 cup milk
1 egg
0.5 (14 ounce) can sweet creamed corn (or 1 small can)
rosemary (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In medium sized mixing bowl, combine corn muffin mix, milk, and egg.
  • Add creamed corn to mix and use a wooden spoon or wire whisk to mix.

1/2 c butter
2 eggs
1 c buttermilk
2/3 c sugar
1/2 tsp baking soda
1/2 tsp salt
1 c cornmeal
1 c all purpose flour

Steps:

  • 1. Preheat oven to 375. Put heavy, oven safe skillet (cast iron is best) in oven while it is preheating. Once skillet is hot, add butter to skillet, allow butter to melt.
  • 2. While skillet is heating prepare cornbread batter. In medium bowl, add eggs-whisk slightly. Add buttermilk, whisk slightly. Add sugar, baking soda and salt. Whisk mixing well. Add cornmeal and flour. Mix well. Add melted butter to batter. Mix well.
  • 3. Pour batter in hot skillet. Bake at 375 for 30-40 min.
