SOUTHERN-STYLE EGG SALAD

Southern-Style Egg Salad image

Southern egg salad, primarily used for sandwiches. Serve on fresh bread of your choice. My wife likes to make double-decker sandwiches (utilizing whole wheat bread for the center slice) with pimento cheese on the other half. Trim the edges and cut into 2 or 3 pieces. Great for tailgating.

SOUTHERN EGG SALAD

Number Of Ingredients 8

2 large eggs
2 tablespoons light mayonnaise
1 small shallot, minced
2 teaspoons sweet pickle relish, or chopped pickle
1/8 teaspoon Old Bay Seasoning
Coarse salt and ground pepper
2 slices dark bread, such as multigrain or pumpernickel
Carrot sticks, for serving (optional)

Steps:

  • Place eggs in a small saucepan, and cover with water by 1 inch. Bring water to a boil; immediately remove from heat, and cover. Let stand 12 minutes. Drain and rinse under cold running water.
  • Meanwhile, in a medium bowl, combine mayonnaise, shallot, relish, and Old Bay Seasoning. Peel eggs; coarsely chop, and fold into mayonnaise mixture. Season with salt and pepper.
  • Top 1 slice of bread with egg salad and remaining slice of bread. Wrap in waxed paper or plastic and refrigerate, up to overnight. Serve with carrot sticks, if desired.

Tips:

  • Choose Fresh Eggs: The quality of your eggs will significantly impact the flavor of your egg salad. Use the freshest eggs you can find, preferably organic or free-range.
  • Hard-Boil Eggs Perfectly: For a creamy and flavorful egg salad, it's essential to hard-boil your eggs perfectly. Place eggs in a single layer in a saucepan, cover with cold water, bring to a boil, then cover and remove from heat. Let eggs stand in hot water for 10-12 minutes for large eggs or 8-10 minutes for medium eggs. Immediately transfer eggs to an ice bath to stop the cooking process.
  • Use High-Quality Mayonnaise: The mayonnaise is a key ingredient in egg salad, so don't skimp on quality. Use a rich and flavorful mayonnaise, preferably homemade or a high-quality store-bought brand.
  • Add Flavorful Ingredients: To elevate your egg salad, incorporate a variety of flavorful ingredients such as finely diced celery, red onion, sweet pickles, capers, fresh herbs like dill or parsley, and a pinch of salt and pepper. For a richer flavor, consider adding crumbled bacon, chopped walnuts, or grated Parmesan cheese.
  • Adjust Seasoning to Taste: Every palate is different, so taste your egg salad and adjust the seasoning accordingly. Add more salt and pepper if needed, or a squeeze of lemon juice for a brighter flavor.

Conclusion:

Southern-style egg salad is a classic dish that can be enjoyed as a sandwich, salad, or appetizer. With its creamy texture, tangy flavor, and versatile nature, it's a perfect dish for any occasion. Whether you prefer a simple egg salad or one loaded with flavorful ingredients, following these tips will ensure you create a delicious and satisfying egg salad every time. So gather your ingredients, hard-boil your eggs to perfection, and whip up a batch of this Southern-style egg salad to enjoy!
