SOUTHERN STYLE COLLARD GREENS

What could possibly be more southern than a big ol pot of collard greens simmering with a big meaty leftover smoked ham bone or a ham hock? Give me a bowl of collards with some of that tasty pot liquor and a slice of cornbread and that's a meal in my book! You can use other meats to season if you like, but to me there is nothing...

Categories     Vegetables

Time 1h30m

Number Of Ingredients 10

2 lb collards, cleaned, stems removed and shredded
2 Tbsp olive oil
1 small onion, sliced
2 clove garlic, minced
3 Tbsp apple cider vingar
1 Tbsp sugar
salt to taste.
1/2 tsp red pepper flakes, optional
1 (32-oz) carton of chicken broth (if you have fresh chicken stock, use that)
1 leftover smoked ham bone, or a nice ham hock

Steps:

  • 1. If using bunches of collards, clean good, remove stems and shred. I used packaged shredded collards I found in the produce section of Walmart. Even though the packaging says the collards I purchased had been washed 3 times, I still rinsed them real good before cooking.
  • 2. Over medium heat in a large pot saute onions and garlic in olive oil until tender. Pack greens in pot and add remaining ingredients. Occasionally turn greens as they wilt bringing wilted greens to top of pot. Once it comes to a boil, reduce heat to simmer. Simmer 45 minutes; taste test the pot liqour and add additional seasoning if desired. Continue simmering another 15 minutes.

  • 4. Bring the broth to a boil and as you d-stem the greens add them to the pot
  • 5. Occasionally toss the greens to get the greens on top of the broth.
  • 6. Once all the greens are in the pot add the red pepper, vinegar, and the sugar. Reduce heat to low for 35 minutes or until tender.
  • 7. NOTE: Adding salt to greens will toughen the greens. add the salt and pepper at the end of cooking.

Tips:

  • Choose the Right Collard Greens: Look for collard greens with dark, glossy leaves and no signs of wilting or yellowing.
  • Prepare the Greens Properly: Remove any tough stems or damaged leaves from the collard greens. Rinse them thoroughly under cold water to remove any dirt or debris.
  • Use a Large Pot: Collard greens tend to wilt down a lot during cooking, so it's best to use a large pot to prevent overcrowding.
  • Add Flavorful Ingredients: Southern-style collard greens typically include a combination of smoky bacon, sweet onions, and savory garlic. Feel free to add other flavorful ingredients like diced tomatoes, chopped bell peppers, or a pinch of red pepper flakes.
  • Cook Low and Slow: The key to tender, flavorful collard greens is to cook them low and slow. Bring the pot to a boil, then reduce the heat to low and simmer for at least 1 hour, or until the greens are tender.
  • Season to Taste: Once the collard greens are cooked, season them to taste with salt, pepper, and any other desired seasonings. You can also add a splash of vinegar or lemon juice for a bit of brightness.
