SOUTHERN SPINACH SALAD WITH PECANS & STRAWBERRIES

Southern Spinach Salad With Pecans & Strawberries image

This recipe is a variation on several I've been looking at and have decided to combine the ingredients from them into one.

Time 40m

Yield 4 serving(s)

Number Of Ingredients 11

4 cups Baby Spinach
2 cups fresh strawberries, sliced
1/4 cup red onion, thinly sliced
1/2 cup pecan halves
1/2 cup blue cheese, crumbled
3 slices bacon, cooked and crumbled
1/3 cup granulated sugar
1/3 cup red wine vinegar
1 tablespoon water
2 teaspoons cornstarch
1 dash salt

Steps:

  • Toast Pecans - Preheat oven to 350 degrees F (175 degrees C). Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken. Remove from oven and set aside. Once cooled, coarsely chop half of the pecans, leaving the other whole. These can be stored safely for up to two weeks in an air-tight container, longer in a freezer.
  • For Dressing - In a sauce pan, combine last five ingredients. Bring to a simmer, and simmer for 1 minute. Remove from heat. This can be stored in the fridge for up to 3 months.
  • For Serving Salad - toss the spinach, strawberries, and red onion to mix. Top with pecans, blue cheese and dressing then lightly toss into salad. (If making this in advance, do the final toss right before serving, keeping the pecans and cheese separate).

Categories     Spinach

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

1 (10 ounce) box frozen spinach
4 slices bacon
1 tablespoon brown sugar
1/4 cup onion (minced)
2 garlic cloves (minced)
2 jalapenos (thin sliced)
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Thaw spinach and squeeze out excess juice.
  • Fry bacon till crisp, remove and reserve 3 tablespoons of drippings.
  • Saute onions, garlic, and jalapenos in bacon drippings, just until onions are translucent.
  • Add vinegar and brown sugar and stir until disolved.
  • Add spinach and saute for about 5 minutes.
  • Salt and pepper to taste.
  • Sprinkle on crumbled bacon.

Tips:

  • Use fresh, tender spinach: Choose deep green spinach leaves with no signs of wilting or yellowing.
  • Wash spinach thoroughly: Rinse the spinach thoroughly under cold water to remove any dirt or grit.
  • Dry spinach well: Use a salad spinner or pat the spinach dry with paper towels to remove excess water.
  • Choose flavorful toppings: Select toppings that will add flavor and texture to the salad, such as bacon, hard-boiled eggs, almonds, or crumbled blue cheese.
  • Make a flavorful dressing: Use a simple vinaigrette dressing made with olive oil, vinegar, salt, and pepper, or try a more flavorful dressing, such as a creamy dressing made with mayonnaise, sour cream, or yogurt.
  • Serve immediately: Spinach salad is best served immediately after it is made, as the spinach will wilt if it sits for too long.

Southern spinach salad is a delicious and refreshing side dish that is perfect for any occasion. With its simple ingredients and flavorful dressing, this salad is sure to be a hit with everyone at your table.
