Mom's Scalloped Potatoes image

This is the way my mother always made her scalloped potatoes. The measurements are taken from other recipes because she always just winged it, but the method is the same. The key is to heat the milk first!

Time 1h15m

Yield 6

Number Of Ingredients 6

3 pounds potatoes, thinly sliced
½ onion, thinly sliced
9 tablespoons all-purpose flour, divided
6 tablespoons butter, diced and divided
salt and ground black pepper to taste
3 cups whole milk, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Spread about 1/3 of the potato slices into the bottom of the prepared baking dish. Top with about 1/3 of the onion slices. Sprinkle 3 tablespoons flour over the potato and onion. SOUTHERN SCALLOPED POTATOES

Southern Scalloped Potatoes image

This delicious casserole hasn't been compromised by garlic and some other seasonings to detract from the traditional southern flavor, or gunked up with cheese to turn it into a gratin or doria. We enjoy this authentic southern dish year-round, so good in its creamy simplicity and subtle flavors. My family always expects it for Christmas dinner alongside the ham and cranberry chutney. Be your own judge regarding measurements. I learned from my grandmother and she never measured, so I've learned to guestimate on many of my recipes. NOTE: This dish can easily be frozen after baking, then thawed out and reheated. I do not recommend freezing without baking first, since potatoes will sometimes get mushy if frozen uncooked. I personally do not like a tin baking pan for this particular recipe, especially for freezing, since it can sometimes impart a "tinny" taste. Also, if this recipe is baked in a glass baking dish and then frozen, the glass will shatter if not at room temperature. So, if freezing in a glass baking dish, I recommend baking and freezing in Corning Ware since it will not break.

This scrumptious dish will undoubtedly please any Southern food enthusiast or potato lover. Here are some tips, additional information, and a conclusion to enhance your scalloped potato-making experience:

Tips:

  • Potato Selection: Choose starchy potatoes like Yukon Gold or Russet potatoes. They hold their shape well during baking and create a creamy texture.
  • Slicing Technique: For uniform cooking, slice the potatoes evenly. A mandoline or sharp knife ensures consistent thickness.
  • Layering: Layer the potatoes and sauce mixture in a baking dish, starting and ending with a layer of potatoes. This layering promotes even cooking and prevents the potatoes from drying out.
  • Sauce Consistency: Make sure the sauce mixture is creamy and coats the potatoes evenly. Adjust the milk and butter quantities as needed.
  • Seasoning: Don't be afraid to experiment with seasonings. Add a sprinkle of garlic powder, onion powder, or freshly chopped herbs like thyme or rosemary for extra flavor.
  • Baking Time and Temperature: Bake the scalloped potatoes at a high temperature (350°F or 175°C) to create a crispy crust and a tender interior. The baking time may vary depending on the thickness of the potato slices, so keep an eye on them to prevent overcooking.

Conclusion:

Southern scalloped potatoes are a classic comfort food that combines creamy, tender potatoes with a rich and flavorful sauce. Experimenting with different cheeses, herbs, and seasonings can create unique variations of this dish. Whether you serve it as a main course or a side dish, these scalloped potatoes are sure to be a hit at your next gathering.
