2 tablespoons extra-virgin olive oil, or unsalted butter
8 large eggs
8 Flaky Buttermilk Biscuits
Sausage Gravy
Coarse salt and freshly ground pepper, to taste
Hot sauce, such as Tabasco, to taste

Steps:

  • Heat 1 tablespoon oil or butter in a large skillet over medium-high heat. Crack 4 eggs into skillet, and cook, uncovered, until whites are set, about 2 minutes. (If you prefer to cook your yolks further, cover skillet.) Transfer to a plate. Repeat. Arrange 1 or 2 biscuits on each plate. Top with gravy. Place 1 egg on each biscuit. Season with salt, pepper, and hot sauce.

8 ounces breakfast sausage
2 tablespoons shortening or 2 tablespoons lard
3 tablespoons flour
1 1/2-1 3/4 cups milk
salt and pepper, to taste
1 dash cayenne pepper, option

  • Cook sausage in a medium skillet over medium-low heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel.

1/2 lb sweet sausage, removed from casings
1/2 lb hot Italian sausage, removed from casings
3 tablespoons all-purpose flour
3/4 cup milk
3/4 cup chicken broth
1 1/2 teaspoons thyme, fresh chopped
salt

6 buttermilk biscuits

Steps:

  • Cook both of the sausage meats in large nonstick skillet over medium-high heat, breaking the meat up with the spoon, until browned and cooked through. Using a slotted spoon, transfer the meat to a bowl.
  • Remove all but 3 tablespoons of the fat from the skillet.
  • Sprinkle the flour into the skillet, stir well, and cook over medium-high heat for 1 minute, stirring constantly. Remove from the heat.

1 lb pork bulk sausage (Jimmy Dean)
2 tablespoons shortening (Crisco)
1/4 cup all-purpose flour
3 cups cool milk
6 warm biscuits

Steps:

  • Put the sausage in a large, straight-sided saute pan over medium-heat.
  • As the sausage cooks, crumble into small pieces using a fork.
  • When the sausage crumbles are lightly browned and fully cooked, transfer them and their pan juices to a bowl; set aside.
  • Add the shortening to the hot pan.
  • When the shortening has melted, add the flour, stirring it in slowly with a whisk.

6 Tbsp flour, 6-7 heaping tablespoons
1/2 tsp pepper
4 c milk
1/4 c heavy cream. (optional)

1 lb ground pork sausage
3 Tbsp bacon drippings
1/4 c all purpose flour
3 c milk
salt and fresh cracked pepper to taste

Steps:

  • 1. Brown sausage in a large skillet over medium-high heat. Set aside, leaving the drippings in the skillet.
  • 2. Mix bacon drippings into the sausage drippings. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown.
  • 3. Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for about 15 minutes. May need to thin with additional milk to reach desired consistency.
  • 4. *Notes: We have tried this with a number of different sausages and the general consensus among the family is that unless you can get fresh country coarse-ground sausage, the best sausage for this recipe is Jimmy Dean, and while we prefer the hot variety, those with more timid palates may prefer mild. Also, and this is critical, if you truly want authentic Southern sausage gravy, please don't use butter, oil or margarine for this recipe. Bacon drippings are a MUST, and if you don't save your drippings or are out, just fry up 4 or 5 slices of bacon, and crumble the bacon right into the gravy. Really, don't skip the bacon drippings folks!
