1 cup butter, softened
1 1/2 cups granulated sugar
1 cup light brown sugar, firmly packed
4 large eggs
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
2 teaspoons vanilla extract
3/4 cup butter
1 cup granulated sugar
1/2 cup light brown sugar, firmly packed
4 large egg yolks
1 (12 ounce) can evaporated milk
2 teaspoons vanilla extract
2 cups pecans, chopped

Steps:

  • Grease and flour three nine-inch round cake pans and preheat oven to 350 degrees.
  • Cream the butter with both granulated sugar and light brown sugar until very light and fluffy, then add the eggs, one at a time, beating well after each addition.
  • Sift the flour with the baking powder, baking soda and salt and add to the batter alternately with the milk, beginning and ending with the dry mixture. Stir in the vanilla extract.
  • Divide batter evenly among the prepared pans and bake in the center of the preheated oven for 25 to 30 minutes or until a wooden pick inserted in the center of the layers comes out clean. Return saucepan to a medium heat setting and cook, whisking constantly, until mixture is thick, shiny and caramel-like, about 15 to 20 minutes. Remove from heat and stir in vanilla extract and pecans.
  • Cool icing to a good spreading consistency (about 30 minutes), then spread evenly between cooled cake layers and over the top and sides of the cake.

  • 9. Next add egg yolks and evaporated milk. Stir until mixed well then place back over medium heat and allow to thicken stirring constantly until nice and creamy. Add vanilla and pecans and set aside to cool for 30 minutes before icing cake.

Tips:

  • Mise en Place: Before starting, ensure all ingredients are measured and ready. This will help the baking process go smoothly.
  • Use Room Temperature Ingredients: For best results, bring eggs, butter, and milk to room temperature before mixing. This ensures they blend well and create a smooth batter.
  • Cream Butter and Sugar Properly: Creaming butter and sugar together until light and fluffy is essential for a successful cake. This process incorporates air into the mixture, resulting in a tender and airy cake.
  • Add Eggs One at a Time: Gradually adding eggs one at a time helps prevent the batter from curdling. Beat well after each addition to ensure they are fully incorporated.
  • Do Not Overmix: Overmixing the batter can result in a tough and dense cake. Mix only until the ingredients are well combined.
  • Use Fresh Baking Powder: Make sure your baking powder is fresh and active. Old baking powder can result in a flat and dense cake.
  • Preheat the Oven: Always preheat the oven to the desired temperature before baking. This ensures the cake bakes evenly.
  • Test for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean, the cake is done.
  • Cool Completely: Allow the cake to cool completely before frosting. This will help prevent the frosting from melting and sliding off.

Conclusion:

The Southern Praline Cake is a delightful and decadent dessert that combines the flavors of sweet pralines and moist cake.
