5 cups white distilled vinegar
3 cups granulated sugar
2 tablespoons kosher salt
1 tablespoon whole cloves
1 tablespoon mustard seeds
1 tablespoon whole black peppercorns
1 teaspoon yellow mustard powder
1 teaspoon ground turmeric
Pinch crushed red pepper flakes
1 bay leaf
4 green tomatoes, finely diced
2 green bell peppers, finely diced
1 red bell pepper, finely diced
1 large sweet onion, such as Vidalia, finely diced
1/2 head cabbage, shredded (about 6 cups)

Steps:

  • Clean and sterilize 2 quart-size canning jars with lids.
  • Add the vinegar, sugar, salt, cloves, mustard seeds, peppercorns, mustard, turmeric, red pepper flakes and bay leaf to a large saucepan over medium heat. Bring to a simmer and cook, stirring occasionally, until the sugar dissolves and the flavors start to marry, about 5 minutes.
  • Add the green tomatoes, green and red bell peppers, onion and cabbage and bring to a boil, lower the heat and let simmer, stirring occasionally, for 15 to 20 minutes. Remove from heat. Divide the mixture between the two jars and let cool to room temperature. Serve immediately or seal and refrigerate for up to 6 weeks.

1 envelope taco seasoning
3 medium limes, cut into wedges

Steps:

2 garlic cloves, minced
4 tablespoons soy sauce, divided
2 tablespoons cornstarch

1 cup thinly sliced celery
1 cup chopped onion
1 cup coarsely chopped cabbage

2 T. chili powder
1 tsp. each of kosher salt, black pepper & garlic powder
1/2 tsp. thyme
1/4 tsp. cayenne pepper
2 T. veg oil
1 pork tenderloin, trimmed (about 1-1/2 lbs)
For the chow-chow:
1/2 cup prepared yellow mustard
1/4 cup chopped onion
3 T. honey
2 T. sweet pickle relish
2 T. cider vinegar
2 tsp. worcestershire sauce
kosher salt to taste

Steps:

  • Preheat grill to med-high heat. Combine spices in small bowl and stir in oil. Rub mixture over pork. Grill, covered over direct heat 3 min. Rotate pork and grill 3 min. more. Rotate pork every 3 min. until internal temp registers 155 on instant heat themometer, about 15 min. total. Remove from heat, tent with foil and let rest 5 min. For chow-chow: Simmer sauce ingredients in small saucepan over med-low heat for 3-4 min. Serve with pork.

1 (1 1/4 pound) pork tenderloin, trimmed of silver skin
salt and ground black pepper
⅓ cup ketchup
⅓ cup seasoned rice vinegar
1 (8 ounce) can pineapple chunks, drained with juice reserved
2 tablespoons brown sugar
4 cloves garlic, minced
2 teaspoons hot chili sauce (such as Sriracha®)

1 1/2 lbs pork tenderloin (2 whole) or 6 pork chops
4 teaspoons chili powder
