SOUTHERN PORK TENDERLOIN
I love this recipe because it's very easy and very much an under-20-minute recipe when you are in a hurry! I serve it with garlic mashed potatoes and a side of either mixed veggies or some sweet corn on the cob! I top it with my Mustard Pork Garnish recipe I have on site.

- Stir panko bread crumbs, parsley flakes, garlic powder, onion powder, and black pepper together in a bowl. Dip tenderloin slices in the crumb mixture to coat both sides.
- Heat olive oil over medium-high heat in a skillet and fry the pork until the crumb coating is browned and the pork is no longer pink inside, 2 to 3 minutes per side. An instant-read meat thermometer inserted into the center of the pork should read at least 145 degrees F (65 degrees C).

Steps:
- Cut tenderloin into 4 pieces. Arrange in a single layer between two sheets of plastic wrap and pound with a meat mallet until each is about 1-inch thick. Generously season with salt and black pepper.
- Whisk ketchup, rice vinegar, reserved pineapple juice, brown sugar, garlic, hot chili sauce, soy sauce, and red pepper flakes in a bowl. Set aside.
- Heat vegetable oil in a skillet over high heat. Place pork in pan; reduce heat to medium. Cook until browned on both sides and cooked through, 5 to 6 minutes per side. Transfer to a plate.
- Return skillet to medium heat. Stir butter into hot pan. When butter melts and starts to brown, stir in pineapple chunks. Cook, stirring, until pineapple is golden brown, 3 to 4 minutes.
- Stir in ketchup mixture and 1/4 cup green onion (white parts). Reduce heat to low and simmer until garlic and onion have softened, 5 minutes.
- Return pork to skillet; cook, stirring, until pork is heated through. Garnish with 2 tablespoons green onion tops.

Tips:
- To ensure the pork tenderloin cooks evenly, use a meat thermometer to check the internal temperature. It should reach 145 degrees Fahrenheit for medium-rare or 160 degrees Fahrenheit for medium.
- If you don't have a meat thermometer, you can also check the doneness of the pork tenderloin by cutting into it. The meat should be slightly pink in the center for medium-rare or fully cooked with no pink for medium.
- To prevent the pork tenderloin from drying out, sear it over high heat for a few minutes before reducing the heat to medium-low and cooking it through.
- Baste the pork tenderloin with the cooking juices every few minutes to keep it moist.
- Let the pork tenderloin rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat.
Conclusion:
Southern pork tenderloin is a delicious and easy-to-make dish that is perfect for any occasion. The tenderloin is marinated in a flavorful mixture of spices and herbs, then seared and cooked until tender. Whether you serve it with a simple sauce or a more elaborate side dish, this dish is sure to please everyone at the table. So next time you're looking for a quick and easy weeknight meal, give southern pork tenderloin a try.
