SOUTHERN DEVILED EGGS
A good combo of my mother's and my own deviled eggs over the years. I enjoy my deviled egg somewhat sweet but the condensed milk also gives the deviled egg mixture an unforgettable consistency with a nice shine!

Steps:
- 1. Cook eggs covered in water in a medium sized stainless steel pan. Bring to a boil and let cook for 1 minute. Put on a lid and place on hot pad off of stove for 10 minutes.
- 2. Drain off the water and let cool enough to handle eggs. Peel egg shells off of eggs. Slice eggs in half saving all of the egg yokes.
- 3. Mix together the mashed up egg yolks, mayonnaise (use more if you want for personal preference), Cheddar cheese, minced red bell pepper, and mustard. Add salt and pepper to taste.
- 4. Fill egg halves with yolk mixture and place on serving tray. Sprinkle eggs with paprika, green onions, and bacon bits. Keep refrigerated until ready to serve.
Tips:
- For easy peeling, place the hard-boiled eggs in a bowl of ice water immediately after cooking. This will help to loosen the shells.
- To make the filling smooth, use a food processor or blender to combine the ingredients. This will also help to incorporate air into the filling, making it light and fluffy.
- If you don't have a food processor or blender, you can also mash the ingredients together with a fork. Just be sure to mash them until they are smooth and creamy.
- For a spicier filling, add a pinch of cayenne pepper or paprika. You can also add a few drops of hot sauce.
- For a more colorful filling, add some chopped fresh herbs, such as chives, parsley, or dill.
- To make the deviled eggs ahead of time, fill them and then cover them with plastic wrap. Refrigerate them for up to 24 hours.
Conclusion:
Southern pimento deviled eggs are a classic appetizer that is always a hit at parties and gatherings. They are easy to make and can be tailored to your own taste preferences. With a few simple ingredients, you can create a delicious and impressive dish that will be sure to please everyone.
