1/2 c finely chopped pecans
1/3 c old fashioned oats
2 1/4 c all purpose flour, divided use
1/4 c packed brown sugar
3 Tbsp cold unsalted butter, cut into small pieces
2 1/2 tsp baking powder
1/2 tsp salt
2 large eggs
3/4 c granulated sugar
3/4 c buttermilk
1/3 c oil
2 tsp vanilla extract
1 tsp ground cinnamon
2 c coarsely chopped peaches

  • 1. Heat oven to 350 degrees F. Line a 12-cup Texas-sized muffin pan with paper liners.

2 tablespoons unsalted butter, cut into small pieces
1/2 cup plus 2 tablespoons granulated sugar
1/2 cup plus 2 tablespoons dark-brown sugar
1/2 teaspoon coarse salt
1/4 cup plus 2 tablespoons sour cream
1 tablespoon bourbon
1 1/2 teaspoons pure vanilla extract
5 ounces pecan halves (1 1/3 cups), toasted

Steps:

  • Line a baking sheet with parchment. Melt butter in a saucepan over low heat. Stir in granulated and brown sugars, salt, and sour cream. Raise heat to medium-low, and cook, whisking frequently, until sugar has dissolved. Raise heat to medium-high.
