2 tablespoons butter

Salt and pepper
1 1/2 cups fresh peas
1 tablespoon butter
1 cup diced tomatoes

  • Serve with Buttered Mashed Potatoes and Sauteed Peas and Tomatoes.
  • In a large pot, add the potatoes and pour just enough water to fully cover the potatoes. Heat the water over high heat, until the water comes to a rolling boil. Boil the potatoes in water until they are tender and then drain. Place the potatoes back on the heat and stir until the steam dissipates. Add butter, salt and pepper to the pot and then mash together until they reach the desired consistency.
  • In a large pan, saute the peas in butter over medium heat until they are tender or for approximately 7 minutes. Add diced tomatoes to the skillet and continue to saute until all of the flavors combine.

SOUTHERN MASHED POTATOES

Everyone always tells me that they have never heard of Miracle Whip in mashed potatoes but I grew up on this recipe in South Georgia. Maybe it's a local thing; maybe it's just a family thing but everyone who tries them likes them. I have never measured the ingredients for these so you might want to start off with a little and adjust to your taste. And let me know what you think! P.S. These go great with my Cheesy Meatloaf also on this site.

Time 30m

Yield 4-5 serving(s)

Number Of Ingredients 5

8 -10 potatoes
salt
1/2-1 cup Miracle Whip
1/2 cup butter or 1/2 cup margarine
1/4 cup milk

Steps:

  • Peel and chop potatoes.
  • Boil in 4 quarts of water in till soft (about 15 minutes).
  • Drain and put in large mixer on low.
  • Add Miracle Whip, maargarine, and milk.
  • Mix until smooth.

Tips:

  • For the creamiest mashed potatoes, choose a starchy potato like Yukon Gold or Russet potatoes. These potatoes will hold their shape well and give you a smooth, creamy texture.
  • Peel and cut the potatoes into evenly sized pieces. This will help them cook evenly.
  • Bring the potatoes to a boil in a pot of salted water. Once the water is boiling, reduce the heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender. Drain the potatoes in a colander.
  • Return the potatoes to the pot and add the butter, milk, and seasonings. Mash the potatoes with a potato masher or an electric hand mixer until smooth and creamy. Be careful not to over-mash the potatoes, or they will become gluey.
  • Serve the mashed potatoes immediately, or keep them warm in a slow cooker on low heat until ready to serve.

Conclusion:

Southern mashed potatoes are a classic comfort food that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste. Whether you like them creamy, chunky, or loaded with cheese and bacon, there is a mashed potato recipe out there for everyone.
