SOUTHERN MACARONI & TOMATOES RECIPE - (4.1/5)

Provided by msippigrl

Number Of Ingredients 7

1 (8-ounce) package elbow macaroni
1 (14.5-ounce) can Hunt's petite-diced tomatoes, undrained
1 (14.5-ounce) can Hunt's whole tomatoes, undrained (broken up slightly with a spoon, if desired)
2 tablespoons margarine
Salt and black pepper, to taste
Dash creole seasoning (like Tony Chachere's), optional
Dash garlic salt, optional

Steps:

  • In a 3-quart saucepan, cook the macaroni in boiling salted water until al dente tender. Drain well in a colander. Return macaroni to the pot along with the remaining ingredients. Simmer over medium heat until bubbly, 5 to 10 minutes, stirring occasionally. Remove from heat and let stand a few minutes before serving.

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your sauce will be. If you don't have ripe tomatoes on hand, you can roast them in the oven to concentrate their flavor.
  • Don't overcrowd the pan: When cooking the macaroni, be sure not to overcrowd the pan. This will prevent the macaroni from cooking evenly and will make it more likely to stick together.
  • Use a large pot for the sauce: The sauce will expand as it cooks, so be sure to use a large pot to prevent it from boiling over.
  • Season the sauce to taste: Once the sauce is cooked, be sure to season it to taste with salt, pepper, and other herbs and spices. You can also add a pinch of sugar to balance out the acidity of the tomatoes.
  • Serve the macaroni and tomatoes immediately: This dish is best served immediately after it is cooked. The macaroni will start to absorb the sauce and become soggy if it sits for too long.

Conclusion:

Southern macaroni and tomatoes is a classic comfort food dish that is easy to make and loved by people of all ages. The combination of sweet tomatoes, savory macaroni, and creamy cheese is simply irresistible. This dish is perfect for a weeknight meal or a casual gathering with friends and family. So next time you're looking for a simple yet satisfying meal, give southern macaroni and tomatoes a try. You won't be disappointed!
