Southern Baked Mac and Cheese image

This rich and decadent baked pasta is a Southern Black staple for holidays and special occasions. Steering away from the standard stovetop mac, this version includes three kinds of cheese and bakes up like a casserole with a crispy, golden top. The addition of eggs makes it similar to a cheesy, savory custard. Warning: This is not diet food!

SOUTHERN MAC & CHEESE

Southern Mac & Cheese image

The only way to eat mac & cheese in my opinion!! Real cheese only, no fake processed sauce here.

Provided by Melissa Rogers

Categories     Sides

Time 1h10m

Number Of Ingredients 6

5 c mexican blend shredded cheese
2 large eggs
1 c parmigiano-reggiano, grated
1 c heavy whipping cream
1 large box macaroni, elbow
1/3 c italian bread crumbs

Steps:

  • 1. You will need a 8x12 glass baking dish. Grease with butter then set aside. Preheat oven 350 Start boiling your macaroni noodles until fluffy and tender. Strain thoroughly.
  • 2. Layer the bottom of your baking dish with the noodles covering it well. Sprinkle the shredded cheese over it, then sprinkle Parmesan. Keep repeating until the baking dish is full.
  • 3. In a small bowl beat the eggs and whipping cream. Pour evenly over the Mac and Cheese. Sprinkle more shredded cheese and parmesean on top along with the bread crumbs. Bake covered with tin foil for 30 minutes. Then uncover and bake for the rest to allow cheese to brown.

Tips:

  • Choose the right cheese: Use a combination of sharp cheddar cheese and creamy cheese like mozzarella or fontina for the best flavor and texture.
  • Cook the macaroni al dente: This means cooking it until it is tender but still has a slight bite to it. Overcooked macaroni will become mushy in the macaroni and cheese.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. This will help to prevent the sauce from becoming too thin or runny.
  • Season the cheese sauce: Add salt, pepper, and other spices to taste. You can also add in a bit of mustard or hot sauce for a little extra flavor.
  • Bake the macaroni and cheese: This will help to brown the top of the dish and give it a crispy crust. You can also broil the macaroni and cheese for a few minutes at the end for an even crispier crust.

Conclusion:

Southern mac and cheese is a classic comfort food that is loved by people of all ages. It is a versatile dish that can be made with a variety of different ingredients and flavors. Whether you like your macaroni and cheese cheesy, creamy, or crispy, there is a recipe out there that is perfect for you.
