Number Of Ingredients 6

4 c. all-purpose flour, spooned and leveled, plus more for working
4 tsp. baking powder
1 1/2 tsp. kosher salt
1 tsp. baking soda
3/4 c. cold unsalted butter, cut up
1 1/2 c. buttermilk

Steps:

  • Preheat oven to 450°F. Whisk together flour, baking powder, salt, and baking soda in a bowl. Cut butter into flour with a pastry blender or two forks until mixture resembles small peas. Stir in buttermilk with a fork until dough begins to form a ball. Turn dough out onto a lightly floured work surface; knead 2 or 3 times, gradually adding additional flour as needed to prevent sticking.
  • With floured hands, pat dough into a 1-inch-thick circle. Cut dough into fourths and stack one on top of another. Roll stacked dough into a 1-inch-thick circle. Repeat procedure 3 more times. Use a 2 1/2-inch round cutter to cut biscuits, pressing scraps together once. Place biscuits, slightly touching, on a baking sheet. Chill 15 minutes.
  • Bake until golden brown, 18 to 20 minutes.

MILE HIGH BISCUITS

The title of this recipe has nothing to do with Denver, Colorado...I've never even been there! But they rise up so high we just couldn't call them anything else.

Provided by Stacey Vadas

Categories     Biscuits

Time 15m

Number Of Ingredients 7

2 c flour
4 tsp baking powder
1/2 tsp salt
1/2 tsp cream of tartar
2 1/2 tsp granulated sugar
1/2 c butter
2/3 c milk

Steps:

  • 1. Sift dry ingredients. Add butter and mix with a pastry blender until crumbly. Add milk and mix until all dry ingredients are moistened.
  • 2. Turn onto a floured surface and knead dough 2 minutes. Roll out and cut into biscuits.
  • 3. Bake on an ungreased cookie sheet at 450 degrees for 10 to 12 minutes, depending on the thickness of your biscuits. Serve warm from the oven.

Tips:

  • Use cold butter: This will help the biscuits rise higher and be more flaky.
  • Don't overwork the dough: Overworking the dough will make the biscuits tough.
  • Use a biscuit cutter that is at least 2 inches in diameter: This will ensure that the biscuits are large enough to get a good rise.
  • Place the biscuits close together on the baking sheet: This will help them rise up and create a "mile-high" effect.
  • Bake the biscuits until they are golden brown on top: This will ensure that they are cooked through.

Conclusion:

Southern Living's Mile-High Biscuits are a delicious and easy-to-make biscuit recipe that is perfect for any occasion.
