SOUTHERN PECAN PIE CHEESECAKE

Southern Pecan Pie Cheesecake image

This is the recipe that won $100,000 in Southern Living's Annual 2002 recipe contest. Do you think it's worth $100,000???? I changed it a bit by baking it in a water bath and it is VERY smooth and creamy.

Tips:

  • Use the right cream cheese. Full-fat cream cheese will give you the creamiest, richest filling, while low-fat or nonfat cream cheese will result in a more watery, less flavorful pie.
  • Soften the cream cheese and butter before using. This will help them blend together smoothly and will prevent lumps in the filling.
  • Don't overbeat the filling. Overbeating can cause the filling to become too thick and dense.
  • Use a store-bought pie crust or make your own. If you're using a store-bought crust, be sure to pre-bake it according to the package directions.
  • Arrange the pecans in a single layer on the bottom of the pie crust. This will help them stay evenly distributed throughout the filling.
  • Bake the pie at a moderate temperature. This will help prevent the crust from becoming too brown or overcooked.
  • Let the pie cool completely before serving. This will allow the filling to set properly and will make it easier to slice.

Conclusion:

Southern Living's cream cheese pecan pie is a classic Southern dessert that is perfect for any occasion. With its creamy, flavorful filling and crunchy pecan topping, this pie is sure to be a hit with everyone who tries it. Whether you're a seasoned baker or a beginner, this pie is easy to make and is sure to impress your friends and family.
