SOUTHERN LIVING MARVELOUS BANANA CAKE

Southern Living Marvelous Banana Cake image

This cake is special enough for birthdays, since I made it for my son's first! He loved banana bread (still does!!) so it seemed a natural pick. The Banana-nut frosting is unique or try your own favorite. Note: the frosting calls for both 16 ounces powdered sugar PLUS 3 cups flour.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your cake will be.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter, more tender cake.
  • Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined: Overmixing can result in a tough, dense cake.
  • Pour the batter into a greased and floured loaf pan: This will help to prevent the cake from sticking to the pan.
  • Bake the cake at 350 degrees Fahrenheit for 50-60 minutes, or until a toothpick inserted into the center comes out clean: Check the cake for doneness after 50 minutes. If the toothpick comes out with just a few moist crumbs attached, the cake is done. If the toothpick comes out with a lot of wet batter attached, continue baking for a few more minutes.
  • Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely: This will help to prevent the cake from breaking.
  • Serve the cake with your favorite frosting or glaze: A simple powdered sugar glaze is a classic choice.
