LIMEADE
Thanks to an abundance of limes in Jamaica, limeade is a common drink. Unsweetened bottled lime juice can be swapped instead of fresh for an even quicker limeade. From the book "Lucinda's Authentic Jamaican Kitchen," by Lucinda Scala Quinn (Wiley).

Steps:
- Roll the limes back and forth over the counter with the palm of your hand. Cut limes in half, and juice them by hand or with a juicer; reserve rinds. (You should have about 1/2 cup juice.) Transfer juice and rinds to a large pitcher.
- Bring 1 cup water to a boil in a small saucepan. Add sugar or honey, and stir until dissolved. Pour syrup into the pitcher, and add 4 cups water. Stir until well blended. Add more sugar or honey, if desired. Refrigerate 1 hour. Discard rinds. Serve limeade garnished with lime slices.

Steps:
- Mix first two ingredients together.
- serve over ice.
- note: I use the frozen limeade concentrate, it is very good even in the generic brands.
Tips:
- Use fresh limes for the best flavor. Limes that are slightly green are typically more sour, while limes that are more yellow are typically sweeter.
- If you don't have fresh limes, you can use bottled lime juice. However, fresh limes will give your limeade a much better flavor.
- Add sugar or honey to taste. The amount of sweetener you add will depend on your personal preference.
- Dilute the limeade with water or club soda to taste. This will make the limeade less tart and more refreshing.
- Serve the limeade over ice. You can also garnish it with a lime wedge or a mint sprig.
Conclusion:
Southern limeade is a refreshing and flavorful drink that is perfect for any occasion. It is easy to make and can be customized to your own taste. So next time you are looking for a refreshing drink to quench your thirst, give southern limeade a try.
