SOUTHERN ICED TEA COCKTAIL
I'm so smitten with the new craze of serving desserts, drinks, salads or whatever comes to mind in Mason jars. This is a good one from Deep Dish South blog. She said it's a cross between a Long Island Iced Tea and an Arnold Palmer. Naturally, she suggests to serve this in a what? Yes, a Mason jar!

REAL SOUTHERN ICED TEA
This is for my "Southern to the Core" cookbook series. Feel free to offer your suggestions in the comments. I find Luzianne brand tea to be used frequently in the south, but you can substitute any brand of good quality tea.

Steps:
- 1. In a saucepan, stir sugar into the 1 quart boiling water until completely dissolved. Remove from heat and place tea bags into this sugar syrup mixture. Allow to steep 5-7 minutes.
- 2. Pour cold water and about 2 cups of ice cubes into a 2 1/2 quart serving pitcher. SLOWLY pour hot tea mixture into the cold water. Stir until ice melts and add lemon slices or mint leaves if desired. Serve in tall glasses over ice cubes.
- 3. All tastes are different. People like sweet tea made with as little as 1/2 cup of sugar, up to a cup and a half - we prefer 3/4 to 1 cup sugar per half gallon. Try different mixtures and make it your own.

If you've never had "sweet tea" before, word of warning, they don't call it sweet tea for nothin'! ;) It's some kind of sweet!! A lot of people add even more sugar, but this is "just right" for us! Come on over for a glass! I'll meet you on the front porch swing! :D (Photo from bing images)

Steps:
- 1. In 4-cup micro-safe measuring cup with pour spout (such as Pyrex), heat 3 cups water to boiling in microwave on high. (My microwave takes 5 minutes.) Add baking soda and stir in. *Make sure your water has stopped bubbling before adding or it can bubble over. Add tea bags, holding the strings and tabs, and poke down till all are covered as best you can. Lay tabs over side of glass and place plate or lid on top. Steep for 30 minutes. Remove tea bags to plate. Add 2 cups sugar to measuring cup of tea concentrate. Stir til fully dissolved. 1-2 minutes. **If using a glass pitcher, fill pitcher halfway with cold water, then add tea concentrate, then fill rest of the way full with more cold water. (This prevents your pitcher from breaking from the hot tea!) Place pitcher in refridgerator to chill. Serve over ice with fresh lemon wedges and mint sprigs if desired. Makes a perfect pitcher every time! Enjoy!
Tips:
- Use Fresh Ingredients: For the best flavor, use fresh tea leaves or tea bags. Avoid using old or stale tea, as it will produce a weak and bitter brew.
- Steep the Tea Properly: The steeping time will vary depending on the type of tea you are using. Generally, black tea should be steeped for 3-5 minutes, green tea for 2-3 minutes, and herbal tea for 5-7 minutes. Experiment with different steeping times to find your preferred strength.
- Sweeten to Taste: Southern iced tea is traditionally sweetened with sugar, but you can use any sweetener you prefer. Honey, agave nectar, or stevia are all good options. Start with a small amount of sweetener and add more to taste.
- Chill Thoroughly: Once the tea has steeped, chill it thoroughly before serving. You can do this by placing it in the refrigerator or freezer for several hours, or by pouring it over ice.
- Garnish with Lemon or Mint: For a refreshing twist, garnish your iced tea with a slice of lemon or a sprig of mint. You can also add other fruits, such as berries or peaches, for a fun and flavorful variation.
Conclusion:
Southern iced tea is a refreshing and delicious beverage that is perfect for any occasion. With its simple ingredients and easy preparation, it's no wonder why it's a staple in Southern cuisine. Whether you enjoy it sweet or unsweetened, with lemon or mint, Southern iced tea is sure to quench your thirst and leave you feeling refreshed. So next time you're looking for a cool and flavorful drink, give this classic recipe a try!
