SOUTHERN STYLE GREEN BEANS AND NEW POTATOES

Southern Style Green Beans and New Potatoes image

One of my favorite vegetables fresh out of the garden is green beans. When I was growing up, I remember a man that use to come through our neighborhood in a wagon pulled by a mule. He always had fresh vegetables and while I know my mother purchased other veggies I can still picture those baskets of green beans and new potatoes...

SOUTHERN GREEN BEANS, HAM & POTATOES

Southern Green Beans, Ham & Potatoes image

I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.

SOUTHERN GREEN BEANS & POTATOES

Southern Green Beans & Potatoes image

This is a side dish that you may see on the table instead of a Green Bean Casserole in Louisiana & other parts of the South. It's very simple to make & I enjoy serving it with any kind of roasted or grilled meat. Note: You can make this vegetarian by using vegetable broth and vegan by using vegetable oil instead of butter.

Provided by Cajun Kitchen

Categories     Potato

Time 35m

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon butter (or bacon fat from 4 strips of bacon)
1 medium yellow onion, halved & thinly sliced
4 garlic cloves, minced
1 cup chicken broth (or 1 chicken bouillon cube plus 1 c. water)
1 lb new potato, washed & quartered
1/2 teaspoon creole seasoning, such as tony chachere's
1/2 lb green beans (fresh or frozen & snipped if fresh)

Steps:

  • In a saucepan that has a tight-fitting lid, melt butter or cook bacon on medium heat. Remove bacon when finished cooking (if you're are using it) and set it aside.
  • Add sliced onion & minced garlic to butter or bacon fat. Saute until onions are clear. Be sure to stir often. If you are using bacon, scrape the bottom of the pan to get the bacon bits up and prevent burning.
  • Add chicken broth & bring to a boil. Scrape the bottom of the pan again if you are using bacon to avoid a burnt flavor.
  • Add quartered potatoes & creole seasoning. Place potatoes flesh side down & cover the pan with a lid. Cook for 15 minutes. Do not uncover pan during this time.
  • Stir potatoes after 15 minutes. Add green beans to the top of the pan. Gently push them down between potatoes but do not immerse them in the liquid. Cover with lid again & cook for 10 more minutes. (Note: If you are using frozen green beans, it may take 5 extra minutes to cook because of the decrease in temperature.).
  • Chop cooked bacon & add to the top of your vegetables (if using bacon) & serve.

Tips:

  • Select firm and fresh vegetables: Choose green beans that are bright green and crisp, and potatoes that are firm and free of blemishes.
  • Wash and trim the vegetables: Rinse the green beans and potatoes thoroughly under cold water. Trim the ends of the green beans and cut the potatoes into bite-sized pieces.
  • Use a large pot or Dutch oven: This dish requires a large pot or Dutch oven to accommodate all of the vegetables and other ingredients.
  • Sauté the onion and garlic: Sautéing the onion and garlic in butter adds flavor and aroma to the dish.
  • Add the vegetables and seasonings: Once the onion and garlic are softened, add the green beans, potatoes, salt, pepper, and other seasonings to the pot.
  • Cover the pot and simmer: Cover the pot and simmer the vegetables over medium-low heat until they are tender, about 20-25 minutes.
  • Add the bacon or ham: If using bacon or ham, cook it in a separate skillet until crispy. Add the cooked bacon or ham to the pot of vegetables.
  • Serve hot: Southern green beans and potatoes are best served hot. They can be enjoyed as a side dish or main course.
