4 lbs chicken breasts, cut into strips

oil (for frying)
nonstick cooking spray

  • In a deep fryer or large skillet filled with oil, heat oil on medium-high heat to 365 degrees. D.
  • Dip chicken in the egg mixture, then into the flour mixture. Repeat.
  • Cook chicken in batches, browning on both sides.
  • Then place browned chicken in a baking pan covered in non-stick cooking spray. Cover with barbecue sauce and bake for 10-15 minutes, or until done.

Tips:

  • To achieve crispy and flavorful chicken, ensure the oil is hot enough before adding the chicken pieces. Use a thermometer to measure the temperature, aiming for around 350°F (175°C).
  • For a more authentic Southern flavor, use a cast iron skillet or Dutch oven for frying the chicken. These materials distribute heat evenly, resulting in a crispy exterior and juicy interior.
  • Don't overcrowd the pan when frying the chicken. Allow enough space between the pieces to ensure they cook evenly and don't steam.
  • Use a combination of spices and herbs to create a flavorful barbecue sauce. Common ingredients include paprika, garlic powder, onion powder, cumin, chili powder, and cayenne pepper. Feel free to adjust the quantities to suit your taste preferences.
  • Simmer the barbecue sauce for at least 30 minutes to allow the flavors to meld and deepen. If the sauce becomes too thick, add a little water or chicken broth to thin it out.
  • To achieve a sticky and caramelized glaze on the chicken, brush it with the barbecue sauce during the last few minutes of frying.
