Steps:
- In batches, saute the spinach in a large saute pan over high heat until wilted, 2 to 3 minutes. Transfer to a plate and set aside.
- In the same pan, heat the olive oil over medium heat. Add the onions and garlic; cook until translucent, 5 to 8 minutes. Add the butter and flour; cook for 2 minutes. Slowly whisk in the milk and bring to a boil (it will thicken as comes to a boil). Turn off the heat and stir in the Parmesan, nutmeg and sauteed spinach.
- Serve immediately or hold in a low oven.

Tips:
- Choose fresh spinach: Look for spinach with deep green leaves and no signs of wilting or yellowing.
- Wash the spinach thoroughly: Rinse the spinach leaves under cold water to remove any dirt or debris.
- Cook the spinach quickly: Overcooking will make the spinach limp and watery. Cook it just until it is wilted, about 2-3 minutes.
- Use a good quality cream: Heavy cream or whipping cream will give the creamed spinach a rich and creamy texture.
- Season the creamed spinach to taste: Add salt, pepper, and nutmeg to taste. You can also add other seasonings, such as garlic powder, onion powder, or cayenne pepper.
- Serve the creamed spinach immediately: Creamed spinach is best served hot. It can be served as a side dish or as a main course.
Conclusion:
Creamed spinach is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to get your daily dose of vegetables and it is also a good source of vitamins and minerals. With its creamy texture and rich flavor, creamed spinach is sure to be a hit at your next meal.
