VIDALIA ONION PIE

A light dinner of Vidalia onion pie, a nice salad on the side, and a ice cold glass of homemade lemonade is perfect for hot summer nights! Optional additions can be sweet red pepper to the onions as they cook and/or crumbled bacon or fresh ham bits may be added to the mixture prior to baking. All versions are great! If desired, a couple Vidalia onion rings look great on the top of the pie for decoration!

SOUTHERN CRACKER-ONION PIE

My sis-in-law, Karen, who is from Georgia swears by this yummy pie and I have to agree it is special. Just remember to only use Vidalia onions!! I'm actually surprised she gave me the recipe, it's been her secret recipe for awhile:) She must love me, lol.

Categories     Savory Pies

Time 1h5m

Number Of Ingredients 8

1 c crushed saltine crackers
2/3 c melted butter, divided
2 large vidalia onions, thinly sliced
4 eggs
1 c 2% milk
1 tsp salt
1/2 tsp pepper
1/2 c shredded cheddar cheese

Steps:

  • 1. Heat oven to 350. Lightly spray a 9" pie pan w/ cooking spray. It's best to use a deep dish for this. In bowl, combine crushed crackers w/ 1/3 cup melted butter until crumbly. Press mix into bottom and up sides of pie pan.
  • 2. In lg skillet, over med-high heat, saute onions in remaining butter until tender, stirring often. Pour onions into pie crust.
  • 3. In another bowl, whisk together eggs, milk, salt and pepper. Pour over onions. Sprinkle cheese over top. Bake 45 mins or until center is set. You can cover w/ foil if cheese is browning too quick, but remove foil the last 10 mins. Cut into wedges.

Tips:

  • Use a sharp knife to thinly slice the onions, as this will help them cook evenly.
  • Be sure to caramelize the onions over medium-low heat, stirring frequently, until they are a deep golden brown. This will bring out their natural sweetness and flavor.
  • If you don't have a food processor, you can grate the cheddar cheese by hand.
  • Be sure to press the pie crust into the pie plate firmly, so that it doesn't shrink during baking.
  • Bake the pie until the crust is golden brown and the filling is bubbly. If you insert a toothpick into the center of the pie, it should come out clean.
  • Let the pie cool for at least 15 minutes before serving, so that the filling has time to set.

Conclusion:

Southern cracker onion pie is a delicious and easy-to-make dish that is perfect for any occasion. The combination of caramelized onions, cheddar cheese, and buttery Ritz crackers creates a flavor that is both savory and sweet. This pie is sure to be a hit with your family and friends.
