½ teaspoon salt
1 cup regular grits, uncooked
1 egg, well beaten
1 ½ cups grated sharp Cheddar cheese, divided
½ cup milk
2 tablespoons Worcestershire sauce
2 tablespoons butter
½ teaspoon freshly ground black pepper
¼ teaspoon garlic powder
1 dash hot pepper sauce (such as Tabasco®), or more to taste
1 pinch paprika, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 2-quart casserole dish with nonstick cooking spray.

3 ½ cups water
1 cup quick-cooking grits
3 ounces farmers cheese
2 ounces goat cheese
1 slice American cheese
2 tablespoons butter
2 teaspoons vegetable oil
1 large tomato, diced
2 green onions, sliced
1 clove garlic, minced
1 teaspoon bacon drippings, or to taste
1 pound fresh shrimp - peeled, deveined, and tails removed
salt and ground black pepper to taste
¼ cup half-and-half, or more to taste
1 tablespoon dry sherry
1 green onion (green tops only), sliced

Tips
  • Choose the right grits. Quick-cooking grits will make a creamier dish, while stone-ground grits will have a more rustic texture.
  • Use good-quality cheese. The cheese you use will make a big difference in the flavor of the grits, so don't skimp on quality.
  • Don't overcook the grits. Grits should be cooked until they are tender but still have a slight bite to them.
  • Season the grits to taste. Salt, pepper, and garlic powder are all good choices for seasoning grits.
  • Serve the grits immediately. Grits are best when they are served hot and fresh.
