2 tablespoons olive oil
1 large onion, chopped
1/2 pound Italian sausage, casing removed
4 cups chicken stock
3 garlic cloves, sliced
2 bay leaves
1/2 cup diced carrots
1/2 cup diced celery
1 large potato, peeled and diced into 1/2-inch cubes
1 small zucchini, diced
Two 15.5-ounce cans cannellini beans, drained and rinsed
1/4 cup chopped fresh parsley
One 2-inch-square piece Parmigiano cheese rind
1/2 pound small shell pasta
Grated Parmigiano cheese, for serving at the table

Steps:

  • In a large pot, heat oil over medium heat. Add onion and cook, stirring occasionally until softened--about 3 minutes. Add sausage, breaking it up with a wooden spoon, and cook until browned--about 5 minutes. Add stock, scraping up the browned bits on the bottom of the pot with a wooden spoon. Add garlic, bay leaves, carrots, celery, potato, zucchini, beans, parsley and cheese rind. Bring to a boil, and then reduce to a simmer. Cover and cook for 30 minutes; the stock will slightly thicken. Remove and discard bay leaves and cheese rind.
  • Meanwhile, cook pasta in salted water until al dente. Place 1/2 cup of pasta in each soup bowl and ladle soup over pasta. Serve with cheese.

1 pound dried navy beans, rinsed
1 tablespoon olive oil
1 pound smoked pork sausage, sliced into 1/2-inch pieces
2 cups chopped onions
1 1/2 tablespoons minced garlic
2 bay leaves
2 sprigs fresh thyme
8 cups chicken stock
3 cups water
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Loaf of crusty bread, for garnish

Steps:

  • Soak beans in cold water to cover, overnight (8 to12 hours). Drain beans and rinse well.
  • In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the sausage and saute for 5 to 6 minutes, or until browned. Remove the sausage from the skillet and reserve. Add the onions and cook 2 to 3 minutes, stirring occasionally. Add the garlic and cook, stirring, an additional minute.
  • Add the browned sausage back to the stockpot. Stir in the beans, bay leaves, and thyme. Add the chicken stock, water, salt, pepper, and cayenne. Bring soup to a boil; reduce heat to a simmer and cook, partially covered for 2 1/2 to 3 hours, stirring occasionally. Skim off any fat, as necessary, if desired. (The cook time may vary depending on the beans, but they should be tender and falling apart when finished.)
  • Adjust seasonings with salt and pepper, if needed. Using a potato masher or the flat side of a spoon, gently mash the beans against the bottom and sides of the stockpot, leaving some of the beans whole and some mashed. 2 large smoked ham hocks
1 lb dry butter beans
1 medium onion, diced
1 medium bell pepper, diced
1 large jalapeno, with a slice down the middle
2 c chicken broth
1 pkg smoked sausage, diced
1/2 Tbsp sugar
1/2 tsp to 1 teaspoon salt to taste
1/2 tsp to 1 teaspoon fresh ground pepper to taste
1/2 tsp fresh thyme leaves
3 clove garlic, minced

Steps:

  • 1. In a large stock pot add 8 cups of water and the ham hocks. Bring to a boil, then turn the heat to medium low and simmer ham hocks for 2 hours.
  • 2. To the pot add dry beans, onion, bell pepper, sugar, salt, pepper, jalapeno, garlic, and thyme. Simmer for another hour. Note - the jalapeno will add flavor without the soup being spicy.
  • 3. Remove ham hocks and discard jalapeno. Add chicken broth and diced smoked sausage. Simmer for 20 minutes.
  • 4. Remove ham from the ham hocks and return back to the soup pot.
  • 5. Taste for seasoning and serve with your favorite bread. Corn bread is a favorite of ours.
