Yield Makes 4 servings

Number Of Ingredients 15

2 fresh lemongrass stalks, root ends trimmed and 1 or 2 tough outer leaves discarded from each
2 garlic cloves, chopped
3 tablespoons chopped shallot
1 tablespoon finely chopped peeled ginger
1 (3-inch) fresh serrano or jalapeño chile, finely chopped, including seeds
1 teaspoon water
4 teaspoons Asian fish sauce, divided
1 1/2 pounds ground turkey (dark meat only)
1/4 cup fresh lime juice
1/4 cup vegetable oil
1/2 teaspoon sugar
1/2 teaspoon dried hot red-pepper flakes
4 kaiser rolls, split and grilled
2 cups mixed fresh mint, basil, and cilantro leaves
Equipment: a mini food processor

Steps:

  • Thinly slice bottom 6 inches of lemongrass (1/4 cup), discarding remainder. Finely grind lemongrass, garlic, shallot, ginger, and chile with water and 2 teaspoons fish sauce in mini food processor, scraping down side frequently, until a paste forms.
  • Mix paste and turkey with your hands until just combined (do not overmix) and form into 4 (3/4-inch-thick) patties (4 inches in diameter). Chill patties, covered with plastic wrap, 1 hour (to allow flavors to develop).
  • Whisk together lime juice, oil, sugar, red-pepper flakes, 1/8 teaspoon salt, and remaining 2 teaspoons fish sauce until sugar is dissolved.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).
  • Oil grill rack, then grill patties, covered only if using a gas grill, turning over once, until just cooked through, 10 to 12 minutes total.
  • Whisk lime-juice sauce, then drizzle cut side of a bottom bun evenly with 1 tablespoon sauce. Top with a patty and 1/2 cup mixed herbs. Drizzle herbs with 1 tablespoon sauce and top with bun. Assemble 3 more burgers in same manner.

My version of chicken curry, inspired by Malaysian and Indian curries. I decided to keep this here to save the ingredients for personal purposes, but there's no harm in sharing it to others, so feel free to use.

Time 6h10m

Yield 6

Number Of Ingredients 22

3 tablespoons ground cinnamon
3 tablespoons ground turmeric
1 tablespoon garam masala
1 tablespoon paprika
½ teaspoon grated ginger, or to taste
4 bay leaves
2 whole star anise pods
2 cardamom pods
1 cinnamon stick
1 kaffir lime leaf
⅛ red chile pepper, sliced
2 (8 ounce) containers plain yogurt (such as Nestle®), divided
4 ½ tablespoons fish sauce (patis), divided
10 chicken leg quarters
1 tablespoon olive oil, or as needed
1 tablespoon minced onion, or to taste
1 clove garlic, minced, or to taste
1 cube chicken bouillon
2 cups water
1 tablespoon white sugar, or to taste
1 (6.5 ounce) can Filipino-style tomato sauce
1 tablespoon butter

Steps:

  • Mix ground cinnamon, turmeric, garam masala, paprika, ginger, bay leaves, star anise, cardamom, cinnamon stick, kaffir leaf, and chile pepper together in a bowl.
  • Mix 1/2 of 1 yogurt container with 2 tablespoons of spice mixture and 1 tablespoon fish sauce in a bowl. Make deep cuts into the chicken thighs to allow sauce to penetrate. Coat chicken with yogurt mixture and marinate in the refrigerator for at least 5 hours.
  • Heat oil in a pot over medium-high heat. Stir-fry onion and garlic in the hot pot for 30 seconds; add remaining spice mixture and continue to stir-fry, 30 seconds more. Add chicken to the pan and fry until spices around chicken have darkened, 2 to 4 minutes. Add marinade and bring to a boil over high heat; continue to boil, covered, for 2 minutes.
  • Dissolve bouillon in water and add to the pot. Add remaining yogurt, remaining fish sauce, and sugar. Boil chicken in sauce until nearly cooked through, about 10 minutes.
  • Add tomato sauce; boil until chicken is no longer pink in the centers and sauce has completely thickened, 5 to 10 minutes. Melt butter into mixture and cover. Turn off heat and let dish rest to let chicken absorb sauce, about 30 minutes.

Tips:

  • Use a variety of ground turkey. Ground turkey can be made from different parts of the turkey, and each part has a different flavor and texture. For the best results, use a combination of dark and light meat turkey.
  • Don't overmix the turkey. Overmixing the turkey will make the burgers tough. Mix the ingredients just until they are combined.
  • Form the burgers gently. Be gentle when forming the burgers, as over-handling can also make them tough.
  • Cook the burgers over medium heat. Cooking the burgers over medium heat will help them cook evenly and prevent them from drying out.
  • Use a thermometer to check the internal temperature of the burgers. The burgers are done when they reach an internal temperature of 165 degrees Fahrenheit.
  • Serve the burgers on toasted buns with your favorite toppings. Some popular toppings include lettuce, tomato, onion, cheese, and avocado.

Conclusion:

These Southeast Asian-style turkey burgers are a delicious and healthy alternative to traditional beef burgers. They are made with ground turkey, which is leaner and healthier than beef, and they are flavored with a variety of Southeast Asian spices. The pickled cucumbers add a refreshing and tangy flavor to the burgers, and they are served on toasted buns with your favorite toppings. These burgers are perfect for a summer cookout or a weeknight meal.
