1 cup ziti pasta
4 ounces fat free cream cheese (Neufchatel)
1 tablespoon minced jalapeno
1 -2 tablespoon minced cilantro
1 teaspoon garlic, minced
3 tablespoons green onions, chopped
1/2 cup spinach, chopped and cooked
1/4 cup 2% low-fat milk
1 tablespoon low-fat sour cream
salt

Steps:

  • In a bowl, bring cream cheese to room temperature to soften.
  • Add minced jalapeños, cilantro, garlic, green onions chopped, spinach, milk, sour cream, and pinch of salt.
  • Mix well.
  • Warm over *low heat* while cooking pasta.
  • DO NOT BOIL or BURN!
  • Cook pasta al dente; drain and let it cool a bit.
  • Add to cream cheese sauce and mix well.
  • Serve sprinkle with more cilantro, if desired.

½ pound ground turkey
¼ cup chopped onion
1 (16 ounce) can stewed tomatoes, undrained
1 (.75 ounce) packet brown gravy mix
1 teaspoon chili powder, or to taste
½ cup frozen corn kernels
½ cup uncooked elbow macaroni
1 cup shredded lettuce
3 tablespoons sour cream
2 cups corn tortilla chips

Steps:

  • Bring a small saucepan of lightly salted water to a boil. Add macaroni and cook until almost tender, about 6 minutes. Drain and set aside.
  • Crumble the turkey in a large skillet set over medium heat. Cook and stir until evenly brown; drain. Add onion to browned turkey meat and cook until onion is tender, about 5 minutes. Stir in tomatoes, gravy mix and chili powder until combined then mix in the corn and macaroni. Cover; reduce heat to low and simmer, for 10 minutes, stirring occasionally.
  • Serve on a bed of tortilla chips topped with shredded lettuce and sour cream.

8 oz corkscrew pasta
1 Tbsp olive oil
1/2 c finely chopped onion
1 jalapeno pepper, seeds and veins removed, finely chopped
3 Tbsp butter
2 clove garlic, minced
3 Tbsp all-purpose flour
1/2 c milk
12 oz bottle of Mexican beer
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
1/4 tsp ground nutmeg
1 c shredded chipotle gouda cheese
2 c shredded sharp cheddar cheese
1 c shredded queso quesadilla cheese
3/4 c finely crushed tortilla chips

Steps:

  • 1. Preheat oven to 375 degrees. Spray a 9" x 9" x 2" baking dish with non-stick cooking spray; set aside.
  • 2. In a large pot, bring 3 - 4 quarts of water to a rolling boil. Add pasta and salt to taste and cook according to package directions to al dente. Drain; set aside.
  • 3. Meanwhile, in a large skillet, heat olive oil over medium heat. Add onion and jalapeno pepper; cook until softened, approximately 3 - 4 minutes, drain; set aside.
  • 4. In a large dutch oven, melt the butter over medium heat. Add the garlic and cook for 1 minute. Add the flour and cook for 2 minutes. Whisk in the milk, beer, salt, pepper and nutmeg and cook until mixture begins to boil and thicken, approximately 5 - 8 minutes, stirring constantly. Add in the chipotle gouda cheese, cheddar cheese and queso quesadilla cheese and stir until cheeses have fully melted and sauce is smooth; remove from heat. Add in the reserved pasta and mix to combine. Add in the reserved onion/pepper mixture and mix to combine.
  • 5. Place macaroni and cheese in prepared baking dish and top evenly with the tortilla chips. Place in preheated oven and cook for 25 - 30 minutes until heated through and bubbly. Let rest for 5 minutes.

Steps:

  • Cook pasta as directed on package, omitting salt.

1 tablespoon cornmeal
1 loaf (1 pound) frozen bread dough, thawed
1/2 pound lean ground beef (90% lean)
1 medium onion, chopped
1 sweet yellow pepper, chopped
1 garlic clove, minced
1 can (16 ounces) fat-free refried beans
1 cup salsa
1 can (4 ounces) chopped green chilies
1 to 2 teaspoons chili powder
2 cups shredded reduced-fat Mexican-blend cheese
2 medium tomatoes, chopped
2 cups shredded lettuce

Steps:

  • Coat two 12-in. pizza pans with cooking spray; sprinkle with cornmeal. Divide the bread dough in half; roll each portion into a 12-in. circle. , Transfer to prepared pans. Build up edges slightly; prick dough thoroughly with a fork. 4 large red bell peppers, tops and seeds removed
1 poblano pepper
1 ½ cups water
1 cup uncooked white rice
1 tablespoon vegetable oil
½ cup chopped onion
1 pound ground beef
1 clove garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1 (10 ounce) can red enchilada sauce
salt and ground black pepper to taste
1 cup shredded Asadero cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
  • Place the bell and poblano peppers in the prepared baking dish. Cook in preheated oven until poblano pepper's skin becomes wrinkled, about 20 minutes. Remove the poblano pepper from the dish, and peel off the skin. Chop the poblano pepper into 1/4 inch pieces, and set aside.
  • Combine the rice and water in a pan over medium heat, and bring to a boil. Reduce heat to low, cover, and simmer until water is absorbed, about 20 minutes. Remove from heat, and set aside.
  • Place the onion in a skillet over medium heat; cook until translucent and soft, about 5 minutes. Stir in the ground beef; cook until crumbly and evenly browned. Drain the meat, and stir in the garlic, cumin, and oregano. Cook and stir until the garlic is fragrant, about 1 minute. Season with salt and pepper to taste. Stir the rice, enchilada sauce, and poblano pepper into the beef mixture, and mix thoroughly. Adjust the seasoning if desired.
  • To make the cheese sauce, place the queso asadero in saucepan over medium heat and stir until melted and smooth.
  • Lower oven heat to 350 degrees F (175 degrees C).
  • Spoon the beef mixture into bell peppers until heaping full. Place any extra beef mixture into the center of the baking dish between the peppers. Drizzle cheese sauce over each pepper. Cover the baking dish with aluminum foil.
  • Bake peppers in preheated oven until cheese sauce bubbles and filling is heated through, about 35 minutes.
