This wonderful recipe is courtesy of my husbands childhood best friend. Mike made this for us year's ago and I just stumbled upon the recipe again in a recipe box I found. This lasagna is so good and easy to put together it is one of my favorites ! Enjoy

Number Of Ingredients 10

1 box lasagna noodles, cooked
1 1/2 lb ground beef or ground turkey
14 1/2 oz can diced tomato's
1 1/2 c picante sauce
1 pkg taco seasoning mix
1 can(s) black beans, drained
1 can(s) green chilies, mild
2 c ricotta cheese
8 oz cheddar cheese, shredded
8 oz monterey jack cheese, shredded

Steps:

  • 1. Pre-heat oven to 350 degrees .Boil Lasagna noodles until just barely firm in center. They will finish cooking in lasagna...Drain and set aside.
  • 2. Brown ground beef or turkey, drain . Add tomato's, picante sauce, taco seasoning, black beans and green chili's. Simmer for 10 min.
  • 3. Grease a 13 X 9 casserole dish. Put half of meat mixture in bottom of casserole dish. Top with noodles, then ricotta and cheddar. Add remaining meat mixture, top with noodles, ricotta and the Monterey Jack on top.
  • 4. Bake for 30 min. or until top is golden brown and bubbly. Serve with sour cream if desired.
  • 5. The great thing about this recipe is it's versatility ! Add or take out anything you would like. You can also make this healthier by using the ground turkey and reduced fat cheeses ! I serve mine on a small bed of lettuce with chopped tomato's, salsa and black olives.

1 can (15 ounces) vegetarian chili with beans
1 carton (15 ounces) reduced-fat ricotta cheese
1 cup shredded reduced-fat Mexican cheese blend
1 can (4 ounces) chopped green chilies
1 teaspoon taco seasoning
1/4 teaspoon salt
8 lasagna noodles, cooked and drained
1 jar (16 ounces) salsa

Steps:

  • In a large bowl, combine the first six ingredients. Spread about 1/2 cup on each noodle; carefully roll up. Place seam side down in a 13x9-in. baking dish coated with cooking spray. , Cover and bake at 350° for 25 minutes. Uncover; top with salsa. Bake 10 minutes longer or until heated through.

1 lb ground beef
1 (15oz) can(s) tomato sauce
1 pkg taco seasoning mix
1 (4oz) can(s) chopped green chilis, drained
1 (6oz) pkg avocado dip
1 c monterey jack cheese, shreeded
1 jalapeno pepper, sliced & seeded
1 sprig(s) cinlantro
4 7" tortillas
vegetable oil

Steps:

  • 1. Cook ground beef until browned, (stirring to crumble); drian well and set aside.
  • 2. Fry tortillas, one at a time in 1/4 inch hot oil, about 5 seconds on each side or just until soft. Drain on paper towel and set aside.
  • 3. Combine tomato sauce and taco seasoning mix in a medium saucepan. Bring to a boil. Reduce heat and simmer, uncovered for 10 minutes. Remove from heat reserve 1/4 cup. Add beef and 1/2 of the green chilis to remaining sauce mix.
  • 4. Grease a 8 or 9 inch baking dish. Layer: Tortilla, meat mixture, avocado dip, and cheese, repeat layers.
  • 5. Bake uncovered at 350 degrees for 40 minutes. Sprinkle with cheese and put back in over for 5 minutes.
