South-of-the-Border Chicken Pizza Tart image

This is an awesome take on a great South-of-the-Border pizza. It's got chicken, salsa, and pepper jack cheese on a nice thin buttery crust... what could go wrong... I've been working on this for an event this weekend, and I played about with it for several days, before I settled on the idea of making it in a tart pan. So,...

PLAN/PURCHASE
1 medium chicken breast, boneless skinless
salt, kosher variety, to taste
black pepper, freshly ground, to taste
1 Tbsp sweet butter, salted, melted
1 pizza crust, homemade if possible, and large enough to fit the bottom of a 9-inch (23cm) tart pan.
4 oz salsa, your favorite, homemade, if possible
3 oz pepper jack cheese, freshly shredded
3 oz colby, or sharp cheddar cheese, freshly shredded
1/4 c black olives, sliced

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Season the chicken breast with a bit of salt and pepper, and sauté in some butter and olive oil over medium heat.
  • 4. Remove from the pan, shred and reserve.
  • 5. Add the melted butter to the bottom of the tart pan.
  • 6. Place in the refrigerator and allow it to cool, about 1 hour.
  • 7. Place a rack in middle position, and preheat the oven to 475 (245c).
  • 8. Remove the tart pan from the fridge, and, place the pizza crust on the bottom of the pan.
  • 9. Chef's Tip: If you want the crust a bit crisper (I do) prebake the crust for about 5 minutes, in the preheated oven.
  • 10. Add the salsa, and spread out evenly.
  • 11. Add the shredded chicken.
  • 12. Add the two cheeses.
  • 13. Top with the black olives.
  • 14. Place in the preheated oven until the cheese is bubbly and beginning to brown, about 12 - 14 minutes.
  • 15. PLATE/PRESENT
  • 16. Cut into slices, and serve while still nice and toasty warm. Enjoy.
  • 17. Keep the faith, and keep cooking.

CHICKEN - SOUTH OF THE BORDER

Chicken - South Of The Border image

I found this recipe in an issue of Good Housekeeping back in the early 80's,when Southwestern/Mexican recipes were hard to come by - at least here in Wisconsin . It's like a Southwestern version of Chicken Parmesan. I used to use Pace Picante on it, but you can adjust it with any salsa or heat level you prefer. I also added the green chiles because I love them! Also would accompany this chicken with home-made Mexican rice, and a picante-based vegetable "stew."

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 cup sour cream
3 ounces cream cheese
1/2 cup cottage cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 teaspoon salt
1/4 teaspoon garlic powder
4 ounces chopped green chilies
3 cups chopped cooked chicken
3 cups cooked rice (I like basmati)
3/4 cup shredded cheddar cheese
3/4 cup monterey jack cheese
2 tomatoes, chopped
1/2 cup chopped olive (optional, I don't like them myself, so we omit them)

Steps:

  • Blend together sour cream, cream cheese, cottage cheese.
  • Add soup, salt, garlic powder, chilies, chicken, rice, cheeses, tomatoes and black olives (if using).
  • Spray a 9x13-inch pan with non-stick spray and pour combined ingredients into pan. Bake at 350° for 30 minutes.

Tips:

  • Prepare the Dough in Advance: If you're short on time, consider making the dough ahead of time and storing it in the refrigerator for up to 2 days or in the freezer for up to 2 months. This will save you time when you're ready to assemble the pizza tart.
  • Use a Food Processor to Make the Dough: If you have a food processor, use it to make the dough. This will make the process much quicker and easier.
  • Don't Overwork the Dough: When mixing the dough, be careful not to overwork it. Overworking the dough will make it tough and chewy.
  • Use Fresh Ingredients: The fresher the ingredients you use, the better your pizza tart will taste. This is especially true for the salsa, chicken, and cheese.
  • Don't Be Afraid to Experiment: Feel free to experiment with different toppings and flavors. You can add different types of cheese, vegetables, or even meat to your pizza tart.

Conclusion:

The South of the Border Chicken Pizza Tart is a delicious and easy-to-make dish that is perfect for any occasion.
