Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 cup sour cream
3 ounces cream cheese
1/2 cup cottage cheese
1 (10 1/2 ounce) can cream of chicken soup
1/2 teaspoon salt
1/4 teaspoon garlic powder
4 ounces chopped green chilies
3 cups chopped cooked chicken
3 cups cooked rice (I like basmati)
3/4 cup shredded cheddar cheese
3/4 cup monterey jack cheese
2 tomatoes, chopped
1/2 cup chopped olive (optional, I don't like them myself, so we omit them)

Steps:

  • Blend together sour cream, cream cheese, cottage cheese.
  • Add soup, salt, garlic powder, chilies, chicken, rice, cheeses, tomatoes and black olives (if using).
  • Spray a 9x13-inch pan with non-stick spray and pour combined ingredients into pan. Bake at 350° for 30 minutes.

Tips:

  • Use a large skillet or Dutch oven: This will ensure that there is enough space for the chicken and pasta to cook evenly.
  • Cook the chicken in batches if necessary: If your skillet or Dutch oven is not large enough to cook all of the chicken at once, cook it in batches. Just be sure to adjust the cooking time accordingly.
  • Don't overcrowd the pan: When cooking the chicken, pasta, or vegetables, be sure not to overcrowd the pan. This will prevent them from cooking evenly.
  • Use a variety of vegetables: Feel free to use any vegetables that you like in this dish. Some good options include broccoli, zucchini, bell peppers, and mushrooms.
  • Use a creamy sauce: The creamy sauce in this dish is what really makes it special. Be sure to use a good quality cheese and milk.
  • Serve immediately: This dish is best served immediately after it is cooked. The pasta will start to absorb the sauce and become mushy if it sits for too long.

Conclusion:

This chicken and pasta dish is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The creamy sauce is what really makes this dish special, and it is sure to be a hit with your family and friends. So next time you are looking for a quick and easy meal, give this chicken and pasta dish a try.
