Braai means grill in Afrikaans, and some say it's the only word recognized in all of the country's 11 official languages. There's no reason this braai sout, a fragrant dry rub, can't be used on steaks other than a T-bone. But the T-bone has had special status there since Archbishop Desmond Tutu, as part of a campaign to bring all South Africans together around the braai, pointed out that the shape of that steak mimics the shape of Africa itself. Serve with whole potatoes roasted in the coals, and drink beer or one of South Africa's excellent wines.

4 tablespoons coarse salt
2 tablespoons white or brown sugar (optional)
2 tablespoons coriander seeds
1 tablespoon black peppercorns
1 tablespoon paprika or 2 teaspoons paprika plus 1 teaspoon cayenne
1 tablespoon garlic flakes or powder
1 tablespoon onion powder
1 tablespoon dried thyme
4 to 6 T-bone steaks, about 1 1/2 inches thick

Steps:

  • Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
  • Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
  • Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let rest 10 minutes and slice across the grain for serving.

1 kg rump steak (about 2 1/2 pounds)
6 tablespoons mrs ball's chutney (*substitue see below)
6 tablespoons tomato sauce (Ketchup)
3 tablespoons Worcestershire sauce
1 tablespoon white vinegar
3 tablespoons apple cider vinegar (balsamic)
2 sliced onions
1/2 cup canned mushroom, drained
salt and pepper

Steps:

  • Cut and season steaks.
  • Mix the remainder of the ingredients together and place the steaks in the sauce and marinade for at least 1 hour.
  • Grill the steak on the BBQ.

An amazing recipe by my boyfriends family for a summer steak on the barbie! Best steak I've had yet, no joke!

Here are the simiple ingredients you'll need for this amazing marinade:
1/2 cup soy sauce
2 tbsp apple juice
3 tbsp brown sugar
1 tsp ginger
2-3 garlic cloves
2 cups soy sauce
4 tbsp apple juice
4tbspn brown sugar
1-2 tsp ginger
3 garlic cloves
both work amazingly!
and should marinade 4-5 personal steaks.

Steps:

  • Simply mix all ingredients together in the pan you plan to marinade your steaks in. Swirl your finger in the marinade before you add your steaks to determine if you'd like to add more of anything.
  • Poke your thawed steaks with a fork 5 times on each side, this will help it soak up the marinade. Then add your steaks to the sweet marinade.
  • I let my steaks marinade on each side for 4 hours, for a total of 8 hours. My boyfriend let's his steaks sit on one sided over night and then the other side while he's at work the next day. So depending on your time and preference of flavour you can marinade for 4-48 hours.
  • Cook you're steaks on the barbie or in the oven how you usually would. For extra flavor you can sprinkle some of your favourite steak seasoning before cooking or eat it with bbq sauce after cooked!

  • Tenderize the steak before marinating it to help it absorb the flavors better.
