RICE PUDDING RECIPE

Time 1h30m

Number Of Ingredients 13

75 g jasmine rice
100 g sugar
1 vanilla pod
4 strips lemon peel
500 ml whole milk
250 ml double cream
500 ml double cream (whipped)
250 g sugar
50 g butter
250 ml double cream
1 teaspoon sea salt (add more if necessary)
250 g nuts, including pecans, pumpkin seeds, almonds and walnuts
125 g sugar

Steps:

  • Put all the ingredients except the whipped cream into a saucepan and cook over moderate heat, stirring often to prevent burning, until the rice is tender and most of the liquid has been absorbed and has thickened to a pouring consistency. This takes about 30 minutes.
  • Pour onto a flat dish and cover with cling film to prevent a skin forming, then let it cool. When the rice pudding has cooled, fold in the whipped cream.
  • For the caramel sauce, put the sugar into a saucepan, add enough water so it resembles wet sand, and boil until a light caramel colour is reached.
  • Remove from the heat and carefully whisk in the butter and cream, then return to the heat, bring back to the boil, and add sea salt.
  • Toast the nuts in the oven. Put the sugar in a wide saucepan, add enough water so it resembles wet sand, and cook until the sugar is on the verge of caramelising.
  • Turn off the heat and add the nuts, stirring vigorously. The nuts will crystallise, turning white and coated in sugar. Turn the heat back on and stir continuously to re-caramelise. The nuts should be individually coated in crusted caramel sugar.
  • Serve a small bowl of rice pudding with a little caramel sauce drizzled on top and the warm caramel sauce and nuts on the side.

WORLDS BEST SOUTHERN RICE PUDDING

Worlds Best Southern Rice Pudding image

This makes old fashioned southern rice pudding into something decadent. When I make this, I sometimes serve it with a strawberry or raspberry sauce...helps to cut the richness while at the same time adding those calories we all need so much :p I sometimes double this & in my household of 7, it lasts one full day tops. The Southern U.S. grows and eats a LOT of rice and recipes like this are much loved down here.

This pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! We like it best because it is oven-baked and not made on the stove top.

Tips:

  • Choose the right rice. Short-grain rice, such as Arborio or Carnaroli, is best for this recipe because it absorbs liquid well and becomes creamy when cooked.
  • Toast the rice before cooking. This helps to bring out the rice's flavor and prevent it from becoming mushy.
  • Use whole milk. Whole milk will give the pudding a richer flavor and creamier texture.
  • Add spices and flavorings. Cinnamon, nutmeg, and vanilla extract are classic spices for rice pudding, but you can also experiment with other flavors, such as cardamom, ginger, or orange zest.
  • Don't overcook the pudding. The pudding should be cooked until it is thick and creamy, but not so long that it becomes dry or rubbery.
  • Serve the pudding warm or cold. Rice pudding can be served warm, at room temperature, or chilled. It can also be topped with whipped cream, fresh fruit, or nuts.

Conclusion:

South African baked rice pudding is a delicious and versatile dessert that can be enjoyed by people of all ages. It is easy to make and can be customized to your own taste preferences. Whether you serve it warm or cold, topped with whipped cream or fresh fruit, this pudding is sure to be a hit.
