Unfed and long-fermented sourdough starter and buttermilk are used for these cinnamon rolls.

3 cups all-purpose flour, plus more as needed, divided
2 cups buttermilk
1 cup unfed sourdough starter
2 tablespoons butter, cubed
2 tablespoons white sugar
1 teaspoon baking powder
¾ teaspoon salt
½ teaspoon baking soda
6 tablespoons butter, melted
½ cup brown sugar
2 tablespoons ground cinnamon

Steps:

  • Mix 3 cups all-purpose flour, buttermilk, sourdough starter, 2 tablespoons cubed butter, and white sugar in a glass bowl. Cover and set in a warm area until double in size, 8 to 12 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine baking powder, salt, and baking soda in a small bowl. Add to flour mixture.
  • Knead dough until it is soft but no longer sticky, adding flour as needed. Roll dough with floured rolling pin until it is 1/4 to 1/2-inch thick.
  • Combine 6 tablespoons melted butter, brown sugar, and cinnamon until it has the consistency of a paste. Spread sugar paste evenly on rolled dough.
  • Roll up dough into a cylinder shape. Cut dough into 1/2-inch pieces using dental floss or a serrated knife. Arrange rolls into a cast iron skillet.
  • Bake cinnamon rolls in the preheated oven until golden brown, 20 to 30 minutes.

Sourdough Saturday - Cinnamon Rolls image

Homemade cinnamon rolls and Easter morning go together like peanut butter and jelly.

2 cups of sourdough starter
½ cup milk
1 tsp salt
2 Tbsp sugar
3 cups all-purpose flour
1 egg
2 tsp cinnamon
3 Tbsp brown sugar
2 Tbsp butter, melted
1 cup chopped pecans
Glaze:
½ cup powdered sugar
½ tsp vanilla extract
2 Tbsp plain yogurt

Steps:

  • In a large bowl or stand mixer bowl, combine the sourdough starter, milk, salt, sugar, and egg until well mixed. Add the flour and knead until dough has a satiny sheen; 8-10 minutes by hand, about 5 minutes when using a stand mixer.
  • Roll the dough into a 12 x 8 inch rectangle. Brush with melted butter. Mix together the brown sugar and cinnamon and sprinkle over the dough. Distribute the chopped pecans over the cinnamon mixture.
  • Roll up the dough from the long side of the rectangle. Slice into one-inch thick rolls.
  • Note - I find it's easiest to slice the log in half, and then slice each half in half again. Then slice 3 rolls from each quarter of the log. That way I end up with 12 equal or nearly equal rolls. If I just start slicing willy-nilly from one end, I end up with some huge rolls and some miniature rolls! Maybe you have a better eye. If so, I am jealous. If not, my method works pretty well.
  • Place the rolls on a greased or parchment lined baking sheet. Cover and let rise in a warm place for 2 hours.(At this point they can be placed in the refrigerator overnight and baked the next day.) Remove cover and bake in a 400 degree oven for 30 minutes or until well-browned.
  • Remove rolls from baking pan and let cool on a rack. While the rolls are still hot, combine the powdered sugar, vanilla and yogurt and drizzle over the rolls. Tangy yogurt goes well with the sourdough flavor, but you can also use milk to make the icing if you prefer. Let sit at least 15 minutes before tasting.

Tips:

  • Use a good quality sourdough starter. The starter should be active and bubbly.
  • Make sure all of your ingredients are at room temperature before you start baking.
  • Do not over-proof the dough. The dough should be risen, but not doubled in size.
  • When rolling out the dough, use a light touch and roll it out to a thickness of about 1/4 inch.
  • Be generous with the cinnamon sugar filling. The more filling you use, the more delicious the cinnamon rolls will be.
  • Bake the cinnamon rolls until they are golden brown and the cream cheese frosting is set.
  • Let the cinnamon rolls cool for a few minutes before frosting them.
