This is one of the Zaar recipes that I adopted. I hope to prepare this one soon and will post any modifications that I make to the recipe.

1 cup active starter
1/4 cup evaporated skim milk
1 cup unbleached flour
1 cup applesauce (Homemade IfPos.)
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon clove
2 teaspoons baking soda
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup butter or 1/2 cup margarine
1 large egg, Well Beaten

Steps:

  • Mix together the starter, milk, flour, and applesauce, and let stand in a covered bowl in a warm place.
  • Cream together the sugars and butter.
  • Add the beaten egg and mix well.
  • Add spices.
  • You may also add a half cup of raisins or chopped nuts, or a mixture of the two.
  • Beat by hand until well mixed and no lumps reamian.
  • Bake at 350 degrees F for half to three quarters of an hour.
  • Test for doneness with a knife when half an hour is up.
  • Allow to cool until cold before cutting and serving.

1/2 cup shortening
2 cups sugar
2 large eggs
1-1/2 cups Sourdough Starter
1-1/2 cups unsweetened applesauce
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1-1/2 teaspoons salt
1-1/2 teaspoons baking soda
2 tablespoons sugar
2 cups all-purpose flour
1/2 cup chopped nuts
1 cup raisins
ICING:
1 cup butter, softened
About 2 cups confectioners' sugar
1 egg yolk
Maple flavoring to taste
1/2 cup heavy whipping cream
1 teaspoon sugar

Steps:

  • For cake, cream together shortening and sugar; beat in eggs. Stir in the starter, applesauce, cloves, cinnamon and allspice. Set aside. In a small bowl, blend salt, baking soda and sugar. Sprinkle over batter; stir in gently. Add flour; stir until smooth. Add nuts and raisins; stir well. Pour into two greased-and-floured 9-in. round baking pans. , Bake at 350° for 25-30 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For icing, combine butter, sugar and egg yolk. Add flavoring; set aside. Beat cream with 1 teaspoon sugar; fold into icing. Frost cake.
